Choryo’s premium Taru sake and brewed with the sacred Omachi sake rice grain using the Yamahai method. It’s a modestly fragrant Junmai showing fresh cedar, vanilla, and a bouquet of flowers. Upfront, Choryo Junmai Tarusake is slightly sweet, but it finishes with a drying wave of acidity. It’s somewhat bigger-bodied. Additional tasting notes include sushi rice, mint, peach skin, and green apple skin. Overall, this is an elegant and complex cedar-aged sake.

Wonderfully dry and clean yet with a fruity bouquet—this truly unique brew comes to you from Yamagata Prefecture, the “Ginjo Kingdom,” known for their mastery in the delicate, floral style. Tasting notes: Light and dry profile with notes of melon and banana.

This savory sake is inspired by local legends of Niigata’s annual fox-bride festival. Local lore tells of mysterious lights that appeared on nearby Mt.Kirin in the distant past, which are claimed to be the lanterns carried in the fox-bride procession. With a 50% polishing rate, this sake could technically qualify as a “daiginjo,” but the savory notes and food pairing versatility identify more with the style expected from “ginjo.” Tasting notes: Rich and dry profile with notes of mango, strawberry, and white pepper.

- Seikyo Omachi Junmai Ginjo "Mirror of Truth"$50.00
Brewed to reflect sake from Yamagata prefecture. Honkara is an abbreviation for “Honjozo Karakuchi”, which is a classic type of sake. Honjozo’s are rich and robust. “Karakuchi” means it is dry. This Honkara is a wonderful representation of the style. It has a light and silky mouthfeel, some marshmallow sweetness, and a crisp dry finish. It can be enjoyed chilled, at room temperature or gently warmed. Tasting notes: Light and dry profile with notes of honey and clove.

Momokawa Brewing of Japan's passion is evident in nearly 200 years of handcrafting some of the finest sake in Aomori Prefecture. MBJ inherited brewing rights from Miura, a brewery that ushered in the modern era of sake in the 1800’s, at the end of the Edo (Samurai) Period. Tasting notes: Slightly sweet scent with notes of vanilla followed by flavors of coconut, cream and spice, with a smooth and soft finish. Layered with mellow and round flavors.

“Sayuri” is an unfiltered sake in a cheerful bottle. The design and pink color of the bottle entices you to start sipping the moment you see it. Its creamy taste matches its creamy texture, and the natural smoothness is enhanced by the fruity and light strawberry aroma, which lifts the spirit like a sweet song. - Watari Bune Junmai Ginjo "The 55"$55.00
Watari Bune is the name of the rice used to make this sake. The brewery revived this rice strain after it had been extinct for sixty years. It took them three years before they had enough rice to brew their first batch of sake. It is now a cult favorite among sake aficionados. Overall very and bright, fruity with some funky aromas and flavors. Over-ripe musk melon on palate, bright white peach in finish.
