COFU, Canada’s pioneering vegan pressed sushi restaurant offers its second location in Vancouver’s vibrant Chinatown. The space introduces a new concept: Canada’s first fully vegan, traditionally styled sushi omakase—a curated, multi-course plant-based dining experience inspired by the elegance of Japanese culinary culture. Part of our regular dining menu is inspired by shōchikubai (松竹梅)—pine, bamboo, and plum—inviting diners to personalize their appetizers and choose just the right amount to suit their appetite.
