Appellation: Friuli-Venezia Giulia Grapes: 100% Glera You might think that Prosecco is only made in Veneto, but the 6 hectare plot of Glera used for these bubbles is located on an estate in Friuli (a stones throw from Veneto), not far from a natural spring at the source of the Livenza River. Which estate in Friuli is a secret, so it’s not so much about who is making it, but how it is made. The grapes are hand-harvested and the juice from only the second and gentlest pressing is put into stainless steel tanks to ferment with native yeasts. After fermentation, the wine sits on the lees for about 60 days. The soil is a combination of limestone and clay giving the grapes a great minerality and allowing them to develop longer on the vine, lending complexity and depth. This unique wine is bright, fresh and mineral-driven with a bit of creaminess and lively bubbles. Pairings: Focaccia, Housemade Ricotta, Kale Crumb Salad, Sicilian Salad, Farrotto, Rigatoni alla Vodka

Appellation: Südtirol, Alto Adige Grapes: 100% Pinot Bianco Castelfeder is nestled at the base of the Alps in Northern Alto Adige. Significant diurnal shifts, an abundance of sunlight, and protection by this mountain range allow for an extended growing season and give a balanced acidity to this wine. The soil is dominated by stony and sparse dolomite limestone lending fine structure. The grapes are hand harvested and gently pressed. Fermentation in stainless steel with 6 months on the yeast lees. Delicate with aromas of white flowers and citrus blossom. Flavors of fresh pear and ripe apple with a citrusy minerality and bright acidity. We saw their Nebbiolo was now available, and it does not disappoint! All vineyards are hand-harvested in the Barolo village of Monforte, these are wines of high-toned aromatics, crushed rose petals, mint, cedar, and tobacco, aged all in stainless steel to preserve its vibrant, lifted structure. Dried red cherry and red raspberry fruit linger along with those earthy spices, a thoroughly charming wine. Pairings: Porchetta, Short Rib, Gemelli with Sausage & Kale, Farroto

A textbook Super Tuscan, combing the bouquet of Sangiovese with the ripe black cherry and plum fruit of Cabernet and Merlot, baking spice and sweet tobacco secondary aromas. Appellation: Vittoria Nero d’Avola, Sicilia Grapes: 100% Nero d’Avola Nero d’Avola is one of the most important indigenous red varietals in Sicily and is thought to have been used in winemaking dating back to the time when the island was colonized by the Greeks. Horus consists of 100 hectares of land, of which 30 are cultivated with vines, while the remaining are given over to almond and olives trees. This area has a warm Mediterranean climate mitigated by fresh ocean breezes. Certified organic, the ancient tradition of planting roses at the end of each row of vines is used. The roses act as an early warning system since they are susceptible to some of the same diseases that threaten the vines. Full-bodied with delicate acid structure. Ripe black cherry and plum with hints of licorice and chocolate. Pairings: Lasagna, Gemmeli with Sausage and Kale, Short Rib
