Aceto d'Origini was produced from grapes harvested in 2018 in the ancient vineyards trained "alla maggiorina" at Castello Conti. The vinegar is processed in the Asì Acetaia delle Langhe in Dogliani through the traditional method called Orleans, named after the French town that became a small capital of vinegar production in the second half of the XlX century. This artisanal method requires excellent ingredients, extreme care, and patience to achieve the evolution of the wine's colors, aromas and flavors into vinegar of the highest quality. The Conti family’s vinegar is unfiltered so it is normal to notice a small sediment at the bottom of the bottle. BICHI WINES - BAJA, CALIFORNIA
- Bichi Pet Mex 2022$38.00
Pet Mex comes from a single, dry-farmed, and own-rooted 69-year-old vineyard comprised of a mysterious grape variety that remains unidentified. The vines are planted close to the Pacific Ocean at 1,066 ft above sea level on sandy loam and granite soils in the area of San Antonio de las Minas in Ensenada, Baja. The grapes are hand-harvested, de-stemmed, and pressed after a few hours on the skins. Fermentation is with wild yeasts, and the wine is bottled before fermentation is finished, where the wine went through secondary fermentation, a la metodo ancestral. No filtration or added SO2.
- Bich Listan 2022$38.00
Listan is produced from 100-year-old pie franco Misión (Listan Prieto) vines grown at 2,400 ft elevation on sandy loam and granite soils in the mountains of Tecate, Mexico, right on the California border. Because the grapes are dry-farmed, yields are very low here. The grapes are de-stemmed and fermented without temperature control in 450 liter concrete tinajas. After fermentation, ½ of the cuvee goes to stainless steel vats, and the other goes to half to used barrels for 3 months. The wine is bottled without fining or filtration and just 10 ppm of added sulfur.

La Santa comes from centenarian, own-rooted Rosa del Peru (Moscatel Negro) vines grown at 2,400 ft elevation on sandy loam and granite soils in Tecate. The grapes were hand-harvested, de-stemmed, and fermented without temperature control in 450 liter concrete tinajas with 45 days of maceration. The wine was then raised for 3 months in ½ stainless steel vats and ½ older barrels.

Importer Jose Pastor dubbed this a Happy Flama. A blend of 70% from the Bichi mixed vineyard (Tempranillo, Cabernet Sauvignon, Dolcetto, etc) in Tecate which normally makes up the Flama Roja plus 30% Mission as vinified for the La Rosa cuvee. Fermentation and resting in stainless steel.
- Bichi Azul El Heroe 2021$47.00
The Azul El Heroe is comprised of Garnacha & Carignan from an 80-year-old vineyard planted on clay-loam soils at 300m above sea level in the Valle de Guadelupe. Vinification The Garnacha was fermented whole cluster with carbonic maceration in stainless steel tanks, while the Carignan was destemmed and pressed with a hydraulic basket press to ferment in concrete tinajas. Once finished fermenting, the two wines were blended and aged in stainless steel tank.

Not the case here. Still, it inspired the name for this wine – as kids of the ex-East Bloc, we were mindblown when the Western treats, including these gums, made it to our country in the nineties. The experience totally resurfaced when I tasted this juicy, zesty wine for the first time, and that’s how the name was born.”
