Country: France Region: Ardèche Type: Cider/Co-Ferment Grape: Viognier/Apples The base of this cider is 100% juice of apples (Red Winter variety). This first part of the fermentation began in fiber tanks in our the cellar and left to finish the fermentation in bottles in matter to create bubbles. It fermented in bottles close to six months until it was to be disgorged in April 2022. It was then topped up with a 2021 Viognier, which improves the expression of the acidity, helps to balance the flavors of the apples, make the cider less cider-like and more vinous. This is a brighter, fresher and drier expression than what you normally find in a French cider.

This wine: ‘Blanc de Noir en Blanc’ is a Pinot Noir, Riesling and Viognier blend vinified white. Catherine says that seeing the results of her bio-dynamic farming practices has greatly inspired her. In the vineyard, the Roques use fertilizer from their neighbor’s cows along with a mix of valerian and dolomite. In between the rows, the natural grasses are left to grow and Alix is contemplating buying a few sheep to help with the “mowing”. They already employ the help of their chickens. As non-interventionist winemakers, their wines naturally convey their respect for and delight in their land and vineyards.

Such an amazing blend of unique grapes that are not known to flourish in Mendocino, but Evan seems to always continue to make magic happen.
