      Amongst the apple trees in Central Pennsylvania, it's common to hear the lore of the Albatwitch lurking through the orchards. This cryptid feeds on a bounty of apples and has been spotted ravishing fruit trees for the last century. We have found a cider hidden deep in our cellar that proves worthy of such a tale. Some say it was a batch of Goldrush gone mad. We say it’s as spontaneous as the Albatwitch itself.       Quiet Company is our 4.5% traditional kölsch. It’s a beer that we haven’t brewed in a few years, and when Jack and Rich returned to the German ale’s recipe at the start of this summer, they stripped it back to the studs. Lightened only by a few bags of Weyermann pilsner malt, Quiet Company’s grist is now primarily Brewing Malt Type Cologne, a Weyermann specialty grain that lends a distinctive maltiness, touch of color, and mild sweetness. I mean, look at that golden beaut. It’s still hopped with all German varietals — Magnum, followed by Tettnanger — in the kettle. And it was allowed to condition at frigid lager temperatures for five weeks. As always, we approached this style with the utmost respect. Kölsch remains all about finesse. Raisins Galois, in a way, is a declassified version of the Morgon bottling also made by Mathieu Lapierre. The juice is derived almost all from the Morgon cru, but higher yields and younger vines are what sets it apart. Because its yield surpasses the 56 hectoliters per hectare, the wine does not quite make the cut. Even so, the wine is less concentrated, easier to drink, and lower in alcohol, making it an all around crown pleaser. “Raisins Galois” means simple “Gallic grapes.”

      FEELS: Bright, Punchy, Dry TASTES OF: Jam, Wildflower Honey + Tart Candy AFTERTASTE: Macerated Blackberries in Freshly Squeezed Lemon Juice Sleep Talker, 2021 vintage 0.9 Tons of Marionberries (Marion Co. Oregon) and 1.1 tons of Albariño grapes (King’s River, California) were crushed and blended together in stainless steel. A spontaneous fermentation was initiated immediately via carbonic maceration, and remained active for 11 days. Grapes and berries were pressed gently on day 18 and the fermented juice was collected and aged in bulk on stainless until the flavors had softened and come together. 92 cases produced. - 9.5% This wine received no sulfur additions.

      An unusual vermut that sees no fortification. Made from a blend of direct-press Cabernet Sauvignon and Sumoi. Once the co-fermentation was complete, the wine was transferred into unique 1200-liter chestnut wood barrels from 1917, obtained from the Santa Agnès estate in the Santes Creus area. A selection of local herbs and fruits, including rosemary, sage, citrus skins, lemon, thyme, and other plants from the Tarragonés region were added to the barrel which imparts a complex flavour and aroma to the vermut.

      Vermouth 100% natural, made from certified organic grapes. Massimo uses the following formula as base: 1 red barrel, 1 young red and 1 oxidized white. Varieties often change, Massimo elaborates by tasting what he has in the current aging to maintain a regular style. Subsequently it macerates in a neutral alcohol, for 2 moons, with a mixture of herbs from a herbalist friend in Torino. The origin of the recipe comes from the herbalist's great-grandfather, Mr. Carpano, who created the blend back in 1870. After the maceration, the liquor blended with the base wine is mixed in, along with some additional parts of sugar. A delicious sipping Vermouth to have over the rocks with (or without) a splash of soda water. Balanced in bitter-sweetness that makes a great compliment to cocktails as well.

      Brilliant golden color. Powerful and mature, with notes of nutmeg, peach jam and dried apricots together with undertones of hydrocarbons. Full-bodied, concentrated, very sweet, minerally, intense on retronasal, with nuances of minerals and candied fruit. Long finish with memories of citrus fruits. Old Vines is made with a selection of muscat vineyards that are from 80 to more than 100 years old, within the municipality of Almachar. The harvest, which is manual, is carried out in the middle of August; after several manual selections, the bunches go through yet another selection before being pressed. Fermentation is carried out in French oak barrels. As is characteristic of this wine, its alcohol content is derived solely from the fermentation of the grapes; this is stopped by cooling once the desired level of alcohol is reached.
