C10 Loco Pale Ale
Brewed for the C10 Tailgate Party at Phillips Farms in support of The Invictus Project. We made a hybrid west coast meets east coast Pale Ale, forming a nice frothy body with Chit and Dextrin malts and a quick hot step mash. Then we hopped it with experimental NZ Manilita and Citra and fermented it at ale temperatures with lager yeast resulting in a slightly opaque beer with a juicy, orange flavor and a dank and snappy finish. 5.3% ABV$4.00+El Morado Purple Corn Mexican Lager
It’s always a special day when we get to push our custom brewhouse’s capabilities and this was one of those days. We gelatinized and boiled purple corn and then step mashed it with pilsner and vienna malt to convert it into sugar. It was then finished with a decoction to pull as much flavor as possible. Fermented cold and naturally carbonated and clarified during a long maturation in horizontal tanks. The result is an incredibly smooth lager with subtle corn flavors and a pink/orange hue. 4.6%$3.50+Everybody Calls Me Giorgio Italian Pilsner
When I was eighteen, nineteen, when I really started to drink beer, I definitely wanted to become a brewer. It was almost impossible because it was— The dream was so big that I didn't see any chance because I was living in a little town, was studying. And when I finally broke away from school and became a brewer, I thought, "Well, now, I may have a little bit of a chance." Because all I really wanted to do is beer and not only drink beer but compose beer. I wanted to do a menu with the sounds of the ‘80s, the sounds of the ‘90s, of the ‘00s, and then have a sound of the future. And I didn't have any idea what to do but I knew I needed some malt. So, we put some local Epiphany malt in the mash tun, lagered it and dry hopped it with US Saaz. I knew that it could be a sound of the future but I didn't realize how much the impact would be. My name is Giovanni Giorgio, but everybody calls me Giorgio. 5.0% ABV$3.50+
Girl You Know Wit's True Belgian Witbier
So, what are you doing back at Blackbird? Well, I sat back and thought about the things we used to do, the beer I drank with you, the cheers, and many brews. I’m so in love, Girl You Know Wit’s True. We are channeling Milli Vanilli, but this beer is a classic, crushable Belgian Witbier with wheat, coriander, and orange peel. A rice lager worthy of legend. Tales of the battles between Habu and Mongoose while enjoying this timeless libation are just where the lore begins. It’s hopped with floral Lorien hops and lagered for several weeks until naturally clarified. This is a deliciously light and delicate beer. 4.7% ABV$3.50+Kolsch

As exciting as a jungle cat in the bathroom, this tropical flavored sour has a subtle acidity that simply mimics the fruit. This lightly wheated ale gets loads of mango and pineapple puree with a little extra tropical pop from mango and yuzu terpenes. Tigers love mango. 5.5% ABV$4.50+Pacifica German Pilsner
Pilsner but with a small twist. Brewed to be light, crisp, dry and snappy. German malt and Saphir hops start off the recipe but then at the end of the boil we added New Zealand Pacifica hops which lends a soft citrusy freshness and noble hop character that keeps the whole thing still feeling classic. 4.7% ABV$3.50+Saison Du Heritage

Brewed with Maris Otter and a blend of 10 roasted malts. For the warmer months we kept the color on the low end with medium-low body and subtle roast. Hazy IPA featuring Vista hops, one of the new public variety hop from Yakima valley. A public variety is a non-patented, open-access hop bred by universities, or in this case, a USDA breeding program which any grower can now use. More varieties like this can help keep costs down for brewers and helps the hop growing industry at the same time. Vista brings a nice freshness and a little lemon citrus, improving drinkability in everything we’ve used it in! 7.8% ABV$4.00+

Modern, West Coast IPAs are one of our favorite styles. We went tried and true with the "holy trinity" hops of Citra, Mosaic, and Simcoe. Because all I really wanted to do is beer and not only drink beer but compose beer. This beer consists of a blend of 2 saison strains from Belgium and is full luscious fruity esters. This beer is also naturally carbonated to heighten the drinking experience and flavor. Classic German style wheat beer. 50% of this beer is made from wheat grown at Perry Family Farm in Rolesville, four miles from the brewery, and malted at Epiphany Craft Malt in Durham. So, what are you doing back at Blackbird? Well, I sat back and thought about the things we used to do, the beer I drank with you, the cheers, and many brews. I’m so in love, Girl You Know Wit’s True. We are channeling Milli Vanilli, but this beer is a classic, crushable Belgian Witbier with wheat, coriander, and orange peel. Order a pint and know my love is for you. 4.5% ABV$10.00
Birdvar Czech Pale Lager (Deep Copy)
We wanted to throw as many quality ingredients and processes as possible into a lower ABV lager. Traditionally floor malted Bohemian barley malt was triple decoction mashed for five hours, a complicated old world brewing process where a portion of mash is separated, boiled and returned to the main mash to hit 5 enzymatic temperature zones. It’s then hopped with huge additions of mild and spicy Saaz, fermented cold and slow and transferred to a horizontal tank for nearly 2 months for rustic nuance and natural carbonation. 4.0% ABV$10.00Everything's Computer West Coast Pale Ale (Deep Copy)
These days you can wake up in the morning, check on the news and mash in a pale ale at the brewery from your phone before you even get out of bed. Might as well do a long step mash and brew it like a traditional pilsner, it’s not like you have to be there. The world is a little different now, everything’s computer and there’s panels everywhere! Hopped mostly with cascade with a little citra and NZ hop kief too. 5.5% ABV$10.00Technicolor WC IPA (Deep Copy)
Technicolor - West Coast IPA - $8.00 14 oz, $4.00 5 oz We found some crazy smelling Cashmere hops so we had to brew with them. There was a myriad of aromas we got off them, so we paired them with a few other hops. Mosaic, Idaho 7 and Chinook. The result is a bright lemon citrus IPA with a little dank and firm bitterness to cleanse the palate. IPA now in Technicolor! 7.0% ABV$10.00
