5% - A new year means a BLANK SLATE. Every year our house witbier gets a bit of a facelift, maintaining the same base recipe while adjusting the botanicals. For 2025, Blank Slate draws inspiration from across the pond, injecting the occasion of high tea. We explored a bevvy of bright, British Tea Time staples like Lemon Peel, in-house dehydrated Bergamot, Chamomile and Keemun Congou Black Tea in addition to the standard Coriander & Bitter Orange Peel. This year the citrusy, light spicy aromas remain with an added whiff of delicate pommefruit and stonefruit esters. The flavors stay zippy and zesty, but with a rounded wheat maltiness and creamy mouthfeel. Come try this tabula rasa today!

5.9% - An unfiltered and unadulterated Mosaic-Citra-Hallertau Blanc hop bomb designed and formulated in California for maximum chill.

7.7% - A lightly smoked coffee porter made with a touch of German beechwood smoked malt as well as high quality English malts to create a chocolaty, roasty, base beer. Then, add two pounds of Sightglass Colombian Finca Madrigal coffee per barrel for an intense but refined coffee character.

8.2% - Dank Side of the Moon was originally a West Coast Double IPA that we brewed years ago. We have now reimagined it with plenty of haze and juiciness for our Week of Dankness. From deep within our hop stash we pulled out two of the dankest hops known to us: Ekuanot and Columbus which are both loaded with pine sap like flavors. On top of those we layered our most ganja- like Nelson and some incredible Citra Cryo for a long smooth toke of guava and tangerine essence.

5.5% - California Style Pilsner. Long drinking sessions will be sustained with this crisp and hoppy Lager which is mashed with Italian grown pilsner malt, fermented cold and then lightly dry hopped with Strata as well as a touch of Mosaic and Talus. A fine aroma of light tropical fruit and whole cluster chenin blanc are followed by flavors of honey drizzle white wheat cracker and dried melon and mango.

4.2% - American lite lager

5% - Brewed in Collaboration with one of our favorite lager brewers and friends, Ashleigh Carter of Biersadt Lagerhaus in Denver, Co. Delicate and crisp rice lager with modern and traditional continental hops. This beer is a nod to traditional lager brewing techniques with a sparkle of the contemporary.

8.3% - We set out to maximize juiciness with the pareto optimal choice of Citra, Ekuanot, and Idaho 7 hops.

4.9% - This one's JUST FOR THE STARS. A brand new German Pils with a Noble Hop atmosphere: big, bright floral notes and some lovely spice character fits in just right with the crispy backbone that still drinks lighter than gravity. Enjoy it in a universe nearby.

7.1% - Have you been the victim of insufficient hop supply? Nelson & Associates are here to help. Bright & aromatic w/ a semi-dry finish.

6.9% - Super dry and crisp with minimal malt and high minerality, and a laser focus on the hop aroma, flavor and bitterness. We desire a hoppy ale that has enticingly pungent aromas that remind us of tropical fruit and freshly cured ganja as well as a flavor that coats the tongue with alluring hop oils that triggers a dopamine response. Hops: Strata, Talus, Simcoe and Motueka

5.7% - Schönramer Gold is a strong and insidious beer. It's hard to put down after drinking a half-liter. Be careful with the Fest-Märzen beer type; the 0.7% alcohol increase makes more of a difference than you might think. Our Gold has a rich golden yellow color with a distinct hint of chestnut honey in the aroma. The first sip is very full-bodied with the taste of freshly baked white bread, then transitions into a honeyed sweetness, followed by a very subtle hop bitterness in the aftertaste. Schönramer Gold has the perfect balance between hops and malt and is naturally cloudy in the barrel.

5.5% - Single Fin Cider™ is a crushable, craveable cider made shareable with anyone, anywhere. Pure to the core™, our crisp, dry hopped cider is made with only three organic, gluten-free ingredients.

5.8% - West Coast Pale ale dry hopped with Mosaic & Ekuanot.

6.9% - It's TIME TO DREAM of the ideal modern West Coast IPA. For us, that's a 6.9% hoppy tropical puncher of Citra, Mosaic, Strata, and Simcoe that drinks easy and hits with just the right amount of bitterness. Aromas of passion fruit and white peach with big, bold flavors of pineapple, mango, and lime. What more could we dream for?

7% - This one's apt to TRICK YOUR EYES. A hazy yellow pour that smells like a grove of citrus islands. Nelson, Mosaic, Cashmere, and Amarillo hops lend explosive juicy aromas of tropical fruit, tangerine, and mild pine. Let the ocular flavors fill your mouth's eyes.

6.4% - A technicolor explosion in a glass! Wide Rainbows is a full-throttle, lusciously hazy IPA packed with Strata, Riwaka, Centennial, and Nelson Sauvin hops. Expect a saturated wave of ripe tropical fruit, fresh-cut citrus, and dank rainbow funk. Strata brings the strawberry-leaning haze juice, Riwaka lifts it with zesty lime and passionfruit, Centennial adds classic grapefruit snap, and Nelson finishes with its signature white wine and gooseberry twist. Creamy, soft, and almost absurdly saturated-this one paints outside the lines.

6.8% - Behold the holy trinity of american hops Citra, Simcoe, Mosaic. Tropical pink fruit, bright citrus and just enough dank.
