    • Cantillion Saint Lambinus 750ml

      Cantillon Saint Lamvinus is a grape lambic produced yearly. Originally, it contained Merlot and Cabernet-Franc grapes, but in the early 2000s the brewery switched to using only Merlot. The grapes used for Saint Lamvinus are not classified organic as the grower does not have the certificate but does grow organically according to Jean Van Roy.[1] It is bottled in 750 mL format usually sometime between mid-October and late-November. Though the brewery states that it is only available in 750 mL bottles, Saint Lamvinus was also available in 375 mL bottles on at least one occasion in 2005. The fruiting process for Saint Lamvinus consists of taking fresh grapes and placing them whole (without stems) into stainless steel tanks with two to 3-year-old lambic for a saturation period of 1-2 months. It is then transferred to a stainless steel bottling tank until it is ready to be bottled

      For this Druif, we macerated Pinot Noir (Spätburgunder) grapes from Harth+Harth, a biodynamic, Demeter-certified natural wine maker from Rheinhessen, Germany. Maceration took over nine months before being blended and bottled. We used over 60% of old lambik, rendering the weighted average age of this blend to over 28 months on the moment of bottling. The final fruit intensity of this blend is 425 grams of Pinot Noir grapes per litre of Druif, that is 320 grams in this bottle. Half of the cereals used to brew the original seven lambikken were sourced in Pajottenland. 8.5% Belgian Lambic

With a pleasant tartness and organic notes of almond and cinnamon as it warms in the glass, 3 Fonteinen Oude Kriek, will age perfectly but may lose some of the vibrant red colours and forest fruit aromas.     • Drie Fonteinen Oude Geueze Geturfd 750ml

      bottling date: 14/04/2020 Sherry barrel Geuze In the spring of 2019, we received a series of very old Oloroso, PX and Amontillado barrels through a local Jerez cooperage. The aromas were a mix of typical fine sherry notes and toasted, peated characteristics, which we have never experienced before. However, after a year of bottle conditioning – because of the higher peated aromas, albeit balanced – we decided to release this bottle not as a Zenne y Frontera, but as a peated geuze. This blend, like blend 61, comes mostly from Oloroso barrels. The weighted average age of this blend, upon its release, is almost three years old. The oldest lambik was brewed in April 2018.

The fional fruit intensity is 323 grams of fruit per litre of Pruim. 80% of the cereals used for the brews were sourced in Pajottenland. 100% 3 Fonteinen. 6.4% Fruited Lambic

      The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used. What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added.       Westmalle Dubbel is a dark, reddish-brown Trappist beer with a secondary fermentation in the bottle. The creamy head has the fragrance of special malt and leaves an attractive lace pattern in the glass. The flavour is rich and complex, herby and fruity with a fresh-bitter finish. It is a balanced quality beer with a soft feel in the mouth and a long, dry aftertaste. The Dubbel contains 7% alcohol. 7% Belgian Dubbel

      Was first brewed in 1934 and the recipe has not changed since 1956. It is made with pale candy sugar and has a very pale color produced from a mash of light pilsener malts. Styrian Goldings hops are used along with some German varieties and the classic Saaz pilsener hop. After a long secondary fermentation, the Tripel Westmalle is bottled with a dose of sugar and yeast. This beer holds up well in the bottle over time and seems to soften with age. 9.5% Belgian Tripel
