The soil grain is equally diverse and randomly shifts back and forth between sand and clay. Vinification: Naturally fermented with 50% stem inclusion for one month with an “infusion style” extraction with gentle pushdowns of the cap by hand to keep it moist and extract as little as possible. Spanish for “skin and bones”, this estate began in 2017 when father/daughter combo Celina and Alejandro Bartolome planted vines in Los Chacayes and Los Sauces. The wines are all farmed organically and made with no corrections, fermented with native yeast and a low addition of sulfur is added just before bottling. Alejandro comes from a long background in organic farming and this is the family’s first foray into wine. The labels were created by the family too! The Rosé König consists of Blaufränkisch, Zweigelt and St. Laurent grapes, which were hand-picked from specially cultivated vineyards on the right bank of Lake Neusiedl. The meteorological conditions in 2023 were as exciting as ever. The spring was fortunately rainy, the summer was sometimes changeable and often hot, but without breaking any records. The harvest then took place in mostly sunny weather and generally ideal conditions. All in all, we think 2023 was a very good vintage for both red and white grapes.$21.00

Notes: Rich Stonefruit, "Sweet Tarts," Light Caramel, Nuttiness, Toast We've been working with our friends at Kettl for a decade with a shared passion for community, farmer relationships and ingredients. They get their caffeine free soba cha from a farm in Nagano - the city famed for its buckwheat noodles. When Kettl opened a store in Los Angeles they asked us to make their in store Matcha and Hojicha Cookies - and we suggested in swirl Sobacha Cookie with Apricot Jam. At that exact moment, Kettleman Apricots became available from Frog Hollow Farm and a collaborative jam was all but fate. This jam is an eccentric ‘creamsicle': Cara Cara Orange + Vanilla Bean. It may not seem like that strange of a fruit or marmalade, yet the first Cara Cara was discovered at the Hacienda Caracara in Valencia, Venezuela in 1976 and is believed to have developed as a spontaneous bud mutation on a Washington naval orange tree. The Cara Cara is a mutation that botanists call bud sport. In botany, a bud sport is a part of a plant that shows morphological differences from the rest of the plant. The cause for these fantastic freaks is generally thought to be a chance genetic mutation. So thank your lucky stars that a Navel orange tree in Venezuela got a little freaky back in 1976, or else we wouldn't have been able to fold organic vanilla bean into these complex floral-forward beauties from Rancho Del Sol farms, and deliver it to you in a little glass jar.$16.00

Every year a British man named John Mattingly calls me to say that his Sevilles are ready to be picked. He has THE ONLY Sevilles in Southern California. We drove to John's House, as we've done for the last 5 years - and John greets us in, what appears to be, the same pair of sweatpants / plaid shirt tucked into them combo that we've seen in years past. John also sports a handlebar mustache thick enough to be a contender at the World Beard and Mustache Championships. We all go over to the tree, and using the pickers and baskets, we muscle the 100 pounds or so off the tree by throwing them into the pool (where they wash) followed by a removal by pool skimming. It's a process just to get them to Sqirl so imagine what the 2 day process is for making the jam....! We don't have much. Our market buyer Michelle is eating these on a Clark Street baguette and generous pat of butter, finished off with Daybreak Seaweed Salt. Unlike the vinegar-marinated white “boquerone” style of anchovies, these anchovies are fried in olive oil “a la Donostiarra” with garlic and cayenne pepper. Uniquely, these anchovies are not packed tightly to the brim with fish. Caravaglio Sicilian Capers in Wine Vinegar
Salina capers—grown on the island of Salina, just off the northern coast of Sicily—are heralded for their fragrant bouquet and delicate crunch. These prized flower buds are hand-harvested at optimal plumpness, then carefully sorted. The capers are set to dry for a few days in the sun, and then packed under sea salt where they undergo lactic fermentation. After 10 days, the capers are cleaned and packed again under new sea salt to age for an additional two months, allowing their floral flavor to blossom.
