      Necessity truly IS the mother of invention! After baking a couple of hundred pasteis de nata (Portuguese custard tarts), we had a surfeit of egg whites and wondered what a baker could do with them! Almond flour and a bit of orange peel determine the flavor of this ample individual cake, and a tablespoon of berry jam adorns the middle.
