Made just outside of Venice, this cow's milk cheese is aged for just one month. A young, fresh tasting cheese, Perlagrigia contains flakes of the prized black truffle. After being carefully washed, it is rubbed with extra virgin olive oil infused with natural truffle flavor. The Italian phrase "Sotto Cenere" means "under ash," indicating that this semi-soft cheese is covered in ash to preserve its flavors.

Stilton, an English blue cheese, is best known for it's strong smell and taste. To be labeled Stilton, the blue cheese may only be produced in three counties: Derbyshire, Leiectershire, and Nottinghamshire, and is made according to a strict code. It comes in a traditional cylindrical shape, and has its own crust that forms throughout the aging process. Stilton cheese contains delicate blue veins that radiate from the center of the cheese. It has a creamy, crumbly, and smooth texture.
SHEEP'S MILK

A 100% pure sheep's milk cheese produced in France's Basque region. Traditionally, it was handmade by shepherds from leftover curds set aside from milking their sheep. The semi-hard cheese is aged for a minimum of 70 days, during which it develops a basket-weave pattern similar to Spain's famous Manchego cheese but with milder and more delicate flavor.

This cheese encouraged me to open a cheese shop. This semi-firm pasteurized goat treasure from Spain's Mediterranean coast is cured for 48-72 hours in Doble Pasta red wine. The paste remains nearly pure white as the rind absorbs a lovely violet hue. The paste is sweet and smooth, delicately grape-y, with a gentle, pliable texture and mild fruit flavor. A D.O.P cheese, it pairs well with medium fruity reds. And you have to love the name.

A soft table cheese made in the style of Taleggio, Bufaletto is made from Italian Buffalo milk and Cow's milk, obtained from the north of Italy. Imported from Lombardy, Bufaletto is a soft, aromatic cheese with a tangy flavor from the Buffalo milk used. Repeated washing with a saltwater brine produce a thin, pale-pink rind. When you cut into the cheese the color of the paste varies from white to pale yellow depending on the season.
