The Millesimato has the bright intensity and definition of the highest caliber sparkling wine. A Pinot Noir (~80%) and Chardonnay (~20%) blend, this wine is hand-riddled in the cellar where it ages nearly 5 years before release. In the mouth, it is creamy and rich with fine, soft beading. BELGIAN DARK STRONG ALE Chimay Grande Reserve Baileux, Belgium Originally released as a Special Holiday beer, the “Capsule Bleue” became available in 1956. It pours a beautiful dark hue with a tight, light brown foam. Warm and dark, with heavy spice aromas that give way to candied fruit and mocha notes. Bitter and sweet notes of chocolate and coffee round out this complex brew. 9% ABV

DUBBEL Chimay Premiere Scourmont Abbey, Hainaut, Belgium Premiere was the first beer produced by Cimay, and has been brewed since 1862. Trappist Monks released this dark brew, as opposed to something lighter, in order to not directly compete with local brewers. A hallmark of its style, this Belgian dubbel is ruby in color, rich, deep, and malty. It has notes of toffee and ripe fruit, with notes of minerality and smooth bitterness, which round out its deep sweetness. 7% ABV

SCOTCH ALE Brouwerij de Glazen Toren Canaster Winterscotch Ale Erpe-Mere, Belgium Canaster, a subtle Scotch beer. The name Canaster refers to an ancient brewing tradition of Aalst. Centuries ago, Canaster was brewed in the Carmelite convent in Aalst. The archeological site was recently uncovered and is the subject of an historical investigation. Canaster now relives as a Winterscotch, a beer for the long, cold winter evenings. 9.5% ABV

HOPPY TRIPEL De La Senne Jambe-de-Bois Bruxelles, Belgium Jambe-de-Bois is a generously hopped Triple. Blond, very balanced, and treacherous: the alcohol is never aggressive, which makes it dangerously easy to drink. Fermentation flavours take the lead, with notes of pear and ripe banana. The hop develops floral and spicy notes (white pepper, nutmeg). Its alcohol content makes is rather round, but the absence of residual sugars leaves its finale dry and lightly bitter. 8% ABV

Fantôme Chocolat is actually pale in color, and the essence of the cocoa is very subtle, but experts agree that this is one of Fantôme's best beers yet. 8% ABV

SAISON Fantôme Pissenlit Soy, Belgium "Fantôme and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite." 8% ABV

"Fantôme del Rey — farmhouse ale brewed with Belgian candi sugar, coriander, black peppercorns, & truffle honey in collaboration with Brasserie Fantôme in Soy, Belgium. We first brewed Fantôme del Rey with the legendary brewer Dany Prignon on a trip to Belgium in 2014. Fantôme del Rey was brewed with Hill Country well water, Texas-grown barley and wheat malt from TexMalt, organic Fuggles hops, Belgian candi sugar, coriander, and black peppercorns. It was fermented in stainless steel with our mixed culture, then re-fermented with truffle honey. "

This beer shines a bright red, tastes like your favorite strawberry-rhubarb pie and has a pronounced tartness. 5.5% ABV

The supply decreased substantially over the years and became less common for use in fruit lambic. The weighted average age of this fruit blend is almost 22 months. The final proportion of fruit used is 385 grams of plums per litre of Pruim. Almost half of the cereals used originate from the Pajottenland.” 7.7% ABV

For the last two summer seasons, unfortunately, peach harvest was almost non-existing with Ludo Rosseels, the last peach grower of importance in Belgium. Luckily, he also has some plum trees that we are fortunate to be able to harvest from. Last summer, we were able to harvest about 250 kilos of Sultana plums from his fields. We macerated these on an ex-Bordeaux barrel with young lambik for five and a half months. We blended with some jonge lambik prior to bottling. This way, we used lambikken from four different barrels and four different brews. The final fruit intensity is at 500 grams of plums per litre. 100% 3 Fonteinen.

“Hondskloten (as called are the common local names for a variety of stew plums,) are called the Belle De Louvain. The plums are typically rather large, egg-shaped, and dark purple red-ish. Beginning of September 2020, we macerated about 300 kilos of these on young lambik in an ex-Bordeaux barrel. Prior to bottling, we blended with a small portion of another two young lambikken. Consequently, the fruit intensity is still at 745 grams of Hondskloten per litre of plum lambik. 100% 3 Fonteinen brewed lambik.” 6.8% ABV

"For this Perzik, we macerated German grown vineyard peaches on two- and three-year old lambics. Maceration took a full four months, before blending with more two-year old lambics. The final fruit intensity clocks at 362 grams of vineyard peaches used per liter of finished Wijnbergperzik." 6.5% ABV
- Tilquin Gueuzérable 2018 (750ml)$45.00
Gueuzérable is made from the fermentation of organic maple syrup from Québec in a blend of 1-, 2- and 3-year old lambics in the same blend ratio as Gueuze Tilquin à l'Ancienne. After the blend was made, it was further fermented in a stainless steel tank. Upon bottling, a small amount more of maple syrup was added to cause secondary fermentation in the bottle. 10% ABV!

Matthias Hild farms 5 hectares in the upper Mosel doing something that makes almost zero financial sense: saving old, terraced parcels of Elbling. In this area, however, it’s important to understand Elbling is something of a religion. It’s a culture, a regional dialect that is spoken through this wine of rigorous purity, of joyous simplicity, of toothsome acidity...The comparisons are plenty, though none of them are quite right; if Riesling is Pinot Noir, then Elbling is Gamay. If Riesling is Chenin Blanc, then Elbling is Muscadet. You get the idea. The joy of Elbling is its raucous acidity, its vigor and energy..."
