Aromatically the wine is very citrus forward, with both lime and lemon as well as a hint of chalkiness. On the palate there are notes of under ripe peaches, lemon juice, a touch of grass, and a bright, zippy minerality.

- White Blend - Jean-Louis Chave Hermitage Blanche, France$12.00+
Rhone White Blend, 2018. The fruit for this wine comes mainly from the lieu-dit Maison Blanche, which sits atop the hill of Hermitage. The soil is iron-rich clay and loess and it is important to constantly maintain this vineyard, as the fine top layer of loess soil erodes easily. This terroir is very interesting for the white as it comes from a cooler soil and gives aromas of stone fruit and white flowers. Some additional fruit comes from l’Ermite and Peleàt. It is a white Hermitage that has the advantage of being approachable while young, but will also benefit from bottle ageing.

Aged for thirty months before release, Defaix’s old vines Chablis is richly dense with a classic “pierre a fusil” bouquet and long mineral-infused finish.
