To make our Chocolate Covered Malt Balls, we carefully hand-ladle melted single origin Tanzania dark chocolate over rich, dense malt balls, nestled in our panner. After about 8 hours of spinning in the panner and delicately adding layer after layer of chocolate by hand, the balls are finished. Unpolished and without the addition of a shiny additive, our handmade malt balls have a rustic look and feel. Honey orchid tea is a type of oolong tea cultivated in the Phoenix Mountain of Guangdong Province in southern China. This lot was hand-harvested from Zhen Ya village in Spring 2010. Soy milk and youtiao (豆浆油条) is a popular choice for breakfast in olden days Singapore. Youtiaos are perfectly deep-fried golden-brown strips of wheat flour dough. Crispy and chewy, they make great snacks on their own but the real enjoyment is dipping them into a warm bowl of nutritious soy milk. In this collaboration chocolate with Xi De Li—a pioneer in the youtiao industry since the 1920s, dehydrated youtiaos are paired with creamy, aromatic 38% soy white chocolate to create this classic dish in a bar.$15.00

The Salazars have over one hundred acres of carefully cultivated Nacional hybrid cacao trees. The volume of beans they harvest allows them to ferment and dry the beans themselves and the level of control they have over the cacao varietals they plant, as well as their post harvest processing, results in beans of exceptional quality and flavor. This is a well balanced bar with very low acidity, intense berry jam flavors and a long finish. We also freshly press the cocoa butter for this from the same Esmeraldas beans we use to make the chocolate, resulting in intense single origin flavor and exceptional smoothness.
