Hand Sliced Smoked Fish

The classic. Brined fresh salmon, salt, sugar and a smoldering fire smokes this common style of Atlantic salmon.
Delicious salt and sugar cured cold smoked salmon rubbed with a flavorful pastrami spice. A Biederman's favorite.
It undergoes a dry-curing, and cold-smoking process from the use of oak-barrels or chips from old whisky barrels. Buttery and smoky.
Gravlax is a Scandinavian cured salmon. Made with a smooth vodka, salt, dill and spices.
Smoked premium Alaskan King salmon. Line caught then cold-smoked. Rich with fatty flavor.
Double cured Irish Organic Smoked Salmon. Buttery, earthy.
Kippered, (or as New Yorkers call it "baked salmon") is made from the fattiest, richest salmon. It’s hot smoked and perfect for a bagel or salmon salad.
Gravlax is a Scandinavian cured salmon. Made with aged scotch whiskey, sugar, salt, dill and spices.
What some called "old-fashioned lox" this belly lox is fairly heavily salted and not smoked.
Caught off of Alaska, this fish is buttery, rich black cod can be sliced or better flaked to add to a cracker, bagel, bread, or enjoyed by itself. *May contain bones. We try to remove the majority of pinbones in all hand sliced fish*
