It might be especially alluring for a generation that grew up with sour candy. The zest makes it a great play with shrimp and scallop dishes, while the sour edge means fermented foods are a natural. What’s in a name? Well, “Xarmant” means charming in Basque country, from which the Xarmant Txakoli Artomaña Txakolina emanates. The region is pronounced “chock-o-LEAN-a,” but the primary grape is the more phonetic hondarrabi zuri. Dry

Winery: Bencze Grapes: Chenin Blanc Region: Badacsony / Hungary Alcohol content: 12.5% Vinification: Most of the crop was gently pressed in whole bunches and some were destemmed and left in open vats for 10 day. After pressing, half of the juice was fermented and aged in clay amphoras the other half in used 300 - 400 l oak. After 10 months on the fine lees it was bottled unfiened, unfiltered without the additon of So2 Lots of citrus, fresh apples and minerality. The soil is made up mainly from volcanic basalt with a mix of clay, loess and sand. In the cellar, István likes to take a step back and let the wines ferment spontaneously mainly in amphoras.

Winery: Ciavolich Grapes: Montepulciano Region: California/Paso Robles Alcohol content: 13% Tasting Notes: Cerasuolo is the wine that was once offered to guests to welcome them and to demonstrate how good they had been during the harvest. The grapes are those of the youngest rows of the estate and they are hand-picked and crushed-destemmed and the must is left in contact with the skins for about 8 hours and then vinified in white. It is then left to ferment at a controlled temperature in stainless steel where it remains until January/February, when it is bottled. Splendid pink reflections and light fruity and floral aromas, typical of the variety, are confirmed on the palate. Fresh, fruity and savory, it always invites you to the next sip. Dry

Region: France / Champagne Alcohol content: 12% Wine description: Sparkling and crystalline with fine and plentiful bubbles. A blooming nose with harmonious notes of butter, white flesh fruits as well as Mirabelle plums and dried fruits. A well-balanced mouth structured due to the greatness of the Pinot Noir, with flavors of white flesh fruits. The Chardonnay brings to this wine a refreshing finish with notes of citrus fruits and pepper Essentially an off-label of Billecart-Salmon. The grapes in this bottle come from younger vines than Billecart-Salmon uses in their eponymous wines, but the process and attention to detail are clearly not lost.

Winery: Chateau Gaudrelle Grapes: Chenin Blanc Region: France, Loire, Vouvray Alcohol content: 12.5% Wine description: Clos Le Vigneau is a single vineyard from an area known as "les Gués d'Amant" or "Lover's Gap". Most of the vines were planted in 1929. Off dry in style with honey, earth and apricot notes. Well balanced with medium body and bright acidity

Chateau Gigognan Region: Cote du Rhone, France Grapes: Grenache, Syrah, Mourvèdre Tasting notes: This intense red wine reveals a subtle and generous nose of dark berries (blueberries and blackcurrant) and liquorice associated with spicy notes. It is an enveloping wine on the palate which gives it great depth and makes it an elegant, complex and harmonious wine. Blending and ageing in concrete tulip vats and oak barrels for 18 months. On the southside of Gigognan's estate are most of the winery’s oldest vines. These are in the Cotes-du-Rhone Villages appellation and if we were talking about them pre-appellation controlee, they would be considered Chateauneuf. But lines were drawn and sadly this area was left out, so with the "Bois des Moines" you get Chateauneuf quality for half the price.

Varietal: Muscadet (Melon de Bourgogne) Origin: Loire Valley, France Bruised green pear and golden apple aromas fill the nose along with white blossom accents. The palate is steely in texture with a streak of limestone running through to the finish. This mineral-driven wine craves your rich and creamy dishes and will be an able palate cleanser that finishes with a kiss of lemon citrus. 12months on the lees

Winery: Chateau Musar Grapes: 50% Cinsault, 40% Grenache, 10% Cabernet Sauvignon Region: Lebanon / Bekaa Valley Alcohol content: 14% Wine description: The three varietal components are fermented in cement vats, with 6 to 9 months ageing in French oak barrels (from the forest of Nevers) before blending and bottling (unfined and unfiltered). As with the Chateau Musar Red, the wines are blended to reflect the character of each vintage. After several years’ maturation in bottle, the wines are released a full four years after the harvest.Deep burgundy in colour with transparent layers showing evidence of Grenache in the blend. Ripe red cherry fruit with plums, dates, mulberries and tea leaves. It is Mediterranean on the palate with sweet tannins and spices. It becomes even better and more refined a day after the bottle is opened. Dry

Winery: Cru Monplaisir Grapes: 75% Merlot, 20%Cabernet Sauv, 5% Cab Franc Region: Bordeaux, France Alcohol: 14% Wine Description: Monplaisir is a Bordeaux Superieur adjacent to the appellation of Margaux. It is this proximity to the prestigious appellation that makes this wine a great value for the money. This wine offers classic Bordeaux aromatics of plums, figs, graphite, black currant and a touch of oak. Cabernet adds structure and firmness to otherwise silky tannins, finishes moderately long and leafy fresh. This pleasing cuvee is aged primarily in tank, with only 10% aging in cask.

Winery: Cousino Macul "Dama de Plata" Grapes: Cabernet Sauvignon Region: Chile / Maipo Valley Alcohol content: 14.1% Wine description: The blend is 85% cabernet sauvignon, 10% malbec and 5% syrah and is generous in its flavors of ripe red fruit on a background of spicy notes. The wine was aged in barrels for a year and the hallmark of the house is here, although the malbec tends to show its exuberance, its red fruits and its flowers." Dry

Varietal: Sauvignon Blanc (Skin Contact) Origin: La Mancha, Spain Organic, Vegan & Unfiltered Orange wine is produced through an ancient process that sees the wine receive skin contact, in this case between 10 and 14 days, during fermentation. This imparts greater flavour, colour and texture to white wines than is typically sought. This has a straw color with aromas of nutmeg, dried oranges, potpourri and chamomile. Medium-bodied and fragrant, with a subtle spiciness and textured-tannins without any bitterness. Very approachable orange wine.

This delicious rosé is made from 100% Pinot Noir. It is bright, fresh, and minerally with forward fruit and vibrant acidity. Karine and Christian Lauverjat recommend airing it for 30 minutes and serving it at about 50 degrees F. to get the most of its flavor. Like many rosés, it is made using the saignée method. A tank full of grape skins and juice is allowed to ferment for at most 24 hours before a small amount of wine is removed while it is still a rosé and allowed to complete fermentation in another tank. The skins remain in the original tank, producing a richer, darker red wine than if the rosé had not been bled off.

During its production, no external agents are added that could mask the expression of the grape variety, such as tartaric and citric acid to correct acidity or sulfur dioxide for stabilization. The must macerates for 10 days and both grapes (Malbec and Torrontés) co-ferment with the whole grains without adding commercial yeasts, with the native yeasts being responsible for carrying out this process. At the end, the wine obtained is bottled without clarifying or filtering which explains its slight turbidity.. Winery: Bodega Garzon Grapes: Marselan Region: Uruguay, Maldonado Alcohol content: 13.5% Wine description: This Uruguayan Marselan was medium ruby in color, with medium aromas of black cherry, blackberry, clove, blueberry, cassis, vanilla, cranberry, black raspberry, and violet. On the palate, it was dry with medium(+) acidity, smooth tannin, and finish, plus medium alcohol, body, and flavor intensity. We had notes of blueberry, blackberry, clove, black pepper, cedar, cassis, black cherry, and vanilla. This one was fruity and almost even on the slightly jammy side with an intensity that held its own against the tannin and acidity.
