    • Maker's Mark

      Maker's Mark double distills its whiskey once in an all copper column still to produce low wine and again in a copper pot still to produce high wine. This added step removes impurities and produces a more refined sipping whiskey. Maker's Mark low wine is distilled off at 120 proof, while the high wine is 130 proof. This more expensive practice is used because it preserves Maker's Mark's mellow grain characteristics.

    • Eola Hills, Chardonnay, Oregon, USA

      Tom Huggins, founder and general manager of Eola Hills, had a dream rooted in facts. He knew that great wines could only come from great vineyards, and through his former occupation as a agricultural insurance expert, he knew where that precious vineyard land was located. This knowledge enabled him to purchase some of the prime sites for his own vineyards in the rolling terrain of the Northwest Willamette Valley in Oregon wine country, and to fulfill a dream of creating his own wine. Situated in a natural weather shadow of the Coast Range, which shunts storms from the Pacific Ocean north to Portland and south below Salem, the Eola Hills vineyards are protected from weather extremes. Yet in summer, a gorge carved by ancient glaciers draws in maritime air to provide ideal cooling for sensitive varietals in those warmer months. In 1986 the first crop was harvested and transformed into wine by a nearby winery. The wine's quality provided ample proof of the vineyards' great potential.

Farming here has occurred since 1986. The LIVE practice of sustainable farming or Low Input Viticulture and Enology has a direct impact on the quality of fruit in relation to the growing conditions. Anything used in the vineyard is regulated to ensure the most minimal environmental impact. Some varietals saw brief, overnight maceration before pressing. Upon completing an uninoculated, native primary fermentation, select barrels saw a reinvigoration of their lees by weekly or monthly Bâtonnage. Barrels were left undisturbed during the spring and summer until racked off gross/fine lees and blended in the end of July of 2023.

      Tom Huggins, founder and general manager of Eola Hills, had a dream rooted in facts. He knew that great wines could only come from great vineyards, and through his former occupation as a agricultural insurance expert, he knew where that precious vineyard land was located. This knowledge enabled him to purchase some of the prime sites for his own vineyards in the rolling terrain of the Northwest Willamette Valley in Oregon wine country, and to fulfill a dream of creating his own wine. Situated in a natural weather shadow of the Coast Range, which shunts storms from the Pacific Ocean north to Portland and south below Salem, the Eola Hills vineyards are protected from weather extremes. Yet in summer, a gorge carved by ancient glaciers draws in maritime air to provide ideal cooling for sensitive varietals in those warmer months. In 1986 the first crop was harvested and transformed into wine by a nearby winery. The wine's quality provided ample proof of the vineyards' great potential.

The tanks are closed to preserve natural carbonation from fermentation, which is the preferred style of Getaria. The tanks are kept chilled to near 32 degrees Fahrenheit before bottling, which preserves the wine’s delicate, effervescent character and signature mousse. These attributes are unattainable through shortcuts such as force-carbonation, which Ameztoi has never employed.
