PET NAT, SPARKLING & CHAMPAGNE
- CAVA: VALLDOLINA BRUT$24.00
The Cava VallDolina Reserva Brut Nature is made from the three traditional varieties Macabeo, Xarel·lo and Parellada, plus a tiny amount of Chardonnay. The grapes were sourced from estate-owned, organically certified vineyards located in the Garraf mountain range, an area with red clay and limestone soils. After the harvest, this Spanish sparkling wine from bodega Can Tutusaus was vinified and fermented in stainless steel tanks. Secondary fermentation took place inside the bottle. Finally, VallDolina Reserva Brut Nature was aged for 24 months prior to the disgorgement, which was performed manually. Pair this organic Cava with light dishes, semi hard cheeses and cold cuts.

The NV Un jour de 1911... is another 100% Bouzy Pinot Noir with an ancient label design. The shining golden-colored cuvée combines ripeness, complexity and finesse with intensity and elegance on both the nose and palate. It's a powerful and rich yet very fine and balanced Champagne with great freshness and complex length. It is juicy and intense but also highly delicate, and its mineral tension and persistent finish make it a first-class wine for elaborate dishes. A great Champagne, with a label that doesn't give any more detailed information regarding vintages or disgorgement date, but we know it's always a 50/50 blend of three vintages (including one great millésime at least 10 years old) and reserve wines from a solera system. I tasted the wine as a Brut with Clouet's German importer in Bremen. You shouldn't drink it too early, as it would be a waste of its talents.

The NV Brut Rosé No 3 Grand Cru is a pure Bouzy Pinot Noir that gets its beautiful intense onion-skin color from the addition of 8% red wine. The nose is rich and complex but at the same time pure and refined, with a nice chalky layer and vinous fruit intensity. Round and rich but fresh and vital on the pure and elegant palate, this is a full-bodied, pretty intense and persistent rosé to be served with main courses. This rosé is seriously complex and expressive, with grip, tension and a long finish. Remarkable in class and style.

The Silver Label Brut Nature NV is entirely Pinot Noir (Blanc de Noir) from Bouzy, mostly from the 2010 vintage. While this cuvee has no sugar, it was aged in a ex-Sauternes barrel and aged in bottle for longer than the standard cuvee for additional richness. The nose of this Brut Nature shows a light touch of brioche and cream with buttered pastry, citrus, and a light oxidized apple note. The palate is rounded with stone fruit and a touch of oak followed by a backbone of flinty minerality kept in check by moderate acid. This will pair wonderfully with much that emerges from the sea

Varietal Composition: 100% Pinot Noir Elaboration: Skin contact method. After harvesting the grapes are placed in wooden vats. Maceration during 4 days and fermentation until a particular density is reached in order to preserve the fruit. Temperature controlled stainless steel vats with cool setting at 45°F. Tasting Notes: “A rosé of pinot noir from the Côte des Bars, this gains its color from a short maceration on the grape skins. The ripeness of the fruit comes through in exotic spices, like Szechuan peppercorns if they could buzz with coolness rather than heat. The red fruit flavor is tight and savory, without even a whisper of sweetness, lasting with gentle, quiet persistence.” – Wine & Spirits

This organic Moscato Giallo (Yellow Muscat) pét-nat comes from the volcanic and chalky hills of Veneto's Luvigliano Hills. After a native ferment (20% in used oak), and some time on skins, this was put into bottle along with some kept must to kick off secondary ferment. Golden apple and peach is crunchy and fresh on the frizzante palate, with a almond grip and honeyed sweetness on the snappy, dry finish.

100% Montònega (a high-quality pink-berried clone of Parellada) fermented with indigenous yeasts partially in tank and finished in bottle. The finished wine comes out at bone dryness with 10.2% alcohol and 5.9 atm of pressure. Made with no additives; unfined and unfiltered.

Our Pétillant Naturel wine is inspired by the God of Wine, Bacchus, whose temple is found in Baalbeck. We wanted to create a simple, natural wine for everyone to enjoy, that's why we made a Pét Nat using the ancestral method. We bottle before the first fermentation is complete then disgorge and refill the bottle and wait for further fermentation to work naturally in the bottle creating a lighter, crisper and a more cleaner, natural sparkling wine.

Tastes and Smells: Hibiscus syrup, tart bing cherry, extra ripe pomegranate ABV: 11.3% We harvested this old-vine, dry-farmed Petite Sirah with brightness and freshness in mind. After destemming the fruit, we allowed it to undergo maceration for five days with no cap management. We then pressed the juice off the skins and let it ferment in tank until it reached 12 g/L of residual sugar, at which point the tank was chilled. The juice was then racked and bottled under crown cap where it finished fermentation in the bottle to give it its soft effervescence. No disgorging, fining, filtration, or SO2 added in the process.

Contact” is an estate grown Amber Wine made with native yeast and bottled without filtration. This wine is a blend of Rkatsiteli and Vidal Blanc. Both of these grapes are white with flecks of red. Winemaker Andrew Backlin lets the fresh pressed juice sit in contact with a the colorful skins until the wine takes on a copper (or amber) hue. This wine is an absolute joy to drink, brimming with fresh orchard fruit flavors. There is great energy in the glass, with a focused finish that is perfect for spring fare.
ROSÈ WINE

Super-light, ultra-refreshing Txakoli rose from Spain's Basque Country with zippy acid, bright red fruit, and a lightly floral finish … the mineral and saline qualities here (as well as the very subtle/slight spritz-y bubbles) are trademarks of the Txakoli category. Perfect for outdoor drinking and always a crowd-pleaser!

RED WINE

Bright medium red color. Dry red wine, with a complex bouquet mixing the aromas from both the grapes and the oak casks. 35% Grenache, 35% Carignan and 30% Tempranillo from 10 - 45 years old vines, vinified separately. The wine is aged in American oak casks for about 6 months, followed by coupage and then 5 months aging in bottles.

Heya Kanz Grenache Syrah Blend is a Lebanese red blend made through whole cluster carbonic maceration of Grenache and Syrah. Bright and high-toned red fruits, white pepper, and woody tannins. Indigenous yeast fermentation. 20 ppm SO2 at bottling, no other additions, unfined and unfiltered. ‘a bright blue roar’ is a line from ‘waves’ by the Bahamas.

Aromas of fresh grass, green melon, and yellow nectarines burst from the glass with subtle notes of cucumber water, honeycomb and a ginger mojito evolving with time. The palate brings a macadamia nut oil profile with intense texture and grip. There is a good bit of acid initially that dissipates leaving a long, persistent and round finish.

The temperature at the winery reaches -5 degrees celsius during the night, consistently in winter, allowing for natural cold stabilization of the wine. I think by the time the wine is bottled, it would have been through MLF, otherwise mind the bubbles!
