This Neat was blended from Cuppa aged in 15-year-old Wild Turkey bourbon barrels for over 34 months. A formidable stout brewed to showcase the expression of the barrels used in the aging process. American Pale Ale - Our award-winning American Pale Ale is our oldest recipe that boasts a smooth bitterness and big flavor. The Citra, Centennial, and Simcoe hops are balanced perfectly with biscuit-like malt notes resulting in a very drinkable ale with vivid flavors of citrus zest and light hints of tropical fruit. 6.1%

A loud Triple IPA brewed to honor our dank cellarman, Chief Skeef. Loaded with Columbus, Apollo, and Idaho 7 hops for a citrus-laced, tropical smorgasbord. Overripe tropical fruit. Dank nugs. Citrus zest with tinges of pine. Highs, no mids, never lows. ABV 9%

A rice lager brewed with our pals at Parlor. Light, dry, and refreshing, this crispy lager uses rice to lend a subtle, delicate sweetness. Notes of soft grain, bright citrus, and a clean, snappy finish make this perfect with food and friends! ABV 5%

Session IPA - This easy-drinking and crisp IPA uses a base of Vienna malt and flaked corn to create great depth in a low ABV beer. Simcoe and Apollo hops provide tons of tropical and piney aromatics that are backed by a touch of candied fruit provided by El Dorado hops. 4.5%

A clean and refreshing West Coast Pilsner showcasing Mosaic hops and Mosaic Abstrax. Ride the wave of citrus zest, ripe mango, and juicy blueberries, with a hint of pine. Effortlessly crisp and juicy with a bright, refreshing finish. 5.2%

Our award-winning Oatmeal Milk Stout combines a variety of roasted grains to produce a complex flavor with notes of dark chocolate and coffee. Fat Pug is rounded out with a touch of sweetness provided by lactose and is named in honor of our founder Adam’s pug, Otto. 5.9%

Pulaski Pils with Blood Orange Seltzer

This West Coast style DIPA is a showcase of our beautiful, resinous and intensely orange-heavy citrus soaked, hand-selected Strata hops. We pair them with Mosaic, Mosaic Cryo and Citra to enhance the dank and tropical notes and really drive some pine in the finish. 8% ABV

IPA - 6.3% Chicago’s hazy IPA, SOJ, is bursting with notes of tropical fruit! This Double dry-hopped IPA features loads of Mosaic, Simcoe, and Nugget hops. Pilsner malt and oats lend to a soft body and touch of haze, making for a juicy, low-bitter IPA. 6.3%

A crisp, and bright Extra Pale Ale hopped heavy handed with Centennial, Idaho 7, and their cryo counterparts. Expect a piney ride through citrus groves—zesty orange peel, resinous pine, and a snap of grapefruit bitterness. Brewed to honor our National Parks. 5% ABV

An English-style porter brewed with our friends up north at Sway Brewing + Blending. Built with 100% Midwestern grain from Sugar Creek Malt, this full-flavored, low-ABV beer incorporates cacao husks, typically a byproduct, into the mash, lending soft, nuanced chocolate character. The result is a thoughtful, sessionable porter with subtle chocolate depth, mellow roast, and a clean, refined finish. ABV 5%

We teamed up with the fine folks at the Salt Shed again to create another 'fizz' cocktail. This time we use a house-made, natural blackberry seltzer, sweetened with cane sugar as the base, and add our award winning Spruce Gin and finish it with a dash of orange bitters. An effortless cocktail with juicy berry notes that amplify the citrus notes in the gin and play perfectly off the bitters.

House Rum served as a base for a unique take on a classic rum punch. Orange and pineapple accompany an infusion of hibiscus and a hint of fruity delight.

One of One is a nonalcoholic wine project from fifth generation winemaker Paul Scotto. These wines are alcohol removed wines and the process for dealcoholization begins in the vineyard and includes proprietary equipment that uses a gentle vacuum process to remove the alcohol and lasts no more than 19 seconds at 74°. Notes of salted brioche and a strong, foamy bubble.

- 10 mint leaves - 2 oz white rum - .75 oz lime juice - .5 oz simple syrup Muddle mint into a shaker tin, then add ice and rest of ingredients. Shake to chill and strain into a highball glass with ice. Top with club soda and garnish with mint.

50% ABV - Coffee Liqueur made with cold-brew from a blend of beans hand-selected with our friends at Hexe Coffee Co. This liqueur is enhanced with a small infusion of cacao nibs, vanilla beans, and light molasses. Rich notes of fresh ground coffee, dark chocolate, caramel, and charred marshmallow.

Our take on the popular digestive, blends 28 carefully curated botanicals. Intense but balanced with big vivid notes of mint, chamomile, and elderflower followed by floral honey-like flavors that are balanced with undertones of bright citrus zest.

Pistachio liqueur made with an infusion of roasted California pistachios, sweetened with pure cane sugar. Expect robust nutty flavors with a delicate finish brought out by the exceptional quality and terroir of the pistachios.

A citrus forward, modern American Gin with bright notes of juicy orange and fresh marmalade. Taking inspiration from our Award-Winning brewery, we finish this gin with an infusion of Mosaic and Citra whole cone hops.

Inspired by the grain bill of our Fat Pug Oatmeal Milk Stout, this unique American malt whiskey is full bodied with rich notes of cocoa powder. You’d swear we add chocolate to this one, but the deep flavor comes entirely from the marriage of the specialty malted barley and barrel.

Fest Whiskey began its lengthy slumber during our annual Festbier brewing season in 2017. The same bottom fermenting lager yeast and grains inspired by Festbier are used. Soft notes of oak, and a touch of earthiness round out the finish, creating a layered and complex American Whiskey. 45% ABV / 90 Proof

Distilled from a wash made to highlight the rich flavor of the classic floor malted brewers’ barley, Maris Otter. We pair the Maris Otter with oats to add body and a touch of sweetness. The result is a creamy malt whiskey with wonderful fruit notes.

American Single Malt Whiskey - 45% ABV - A smoked American Malt Whiskey that was made with Peach-wood smoked malt and aged in fresh American oak barrels for over 2 years. The fruity smoke notes are complex with hints of earth, stone fruit, almond, and honeycomb.

A smoked American Malt Whiskey that was made with peat and cherrywood smoked malt, and aged in fresh American oak barrels for over 2 years. The soft smokey notes are complex and welcoming, with hints of campfire, black cherry, marzipan, and honey.

47.5% ABV - Distilled from a blend of neutral spirits and malted barley. A plentiful amount of Colorado spruce tips, rooibos tea, citrus, lavender, and traditional gin botanicals are utilized to evoke deep forest pine notes that blend with bright citrus and meadow-like floral depth.
