Iris's Story-Worthy Food Menu

This month, we honor Iris and her story, the places she has lived, and the memories she carries with her. "This menu is my opportunity to introduce people to my hometown, Cahuatache in Guerrero, a place many have never heard of. I want everyone to know it, and to taste it." The town is in the mountains of Guerrero, where the ties to pre-Columbian and indigenous roots hold strong. Guerrero holds a major place in Mexican history as a stronghold for indigenous resistance.

Ensalada de Nopalitos
Cactus paddle salad with cherry tomatoes, onion, cilantro, lime, pickled jalapeño, queso panela & queso fresco. Vegetarian, gluten-free. Dairy-free upon request "I didn't eat this salad in Mexico, even though it is a common dish in towns across the country. I ate in the United States, at a table of new friends from parts of Mexico I had never been to. That plate of nopales, passed between newcomers, became the beginning of a friendship."$12.00
Sopa de Frijol
Toasted black bean and dried chili soup with hoja santa, lime. Vegan, gf. Iris’s favorite dish her mother would make. The beans are toasted before they are cooked, an extra step a mother takes, to give her children a food memory that carries them across time. Guerrero is known for its soups and stews, this one is simple in its form but the attention to every component creates warmth and depth.$8.00
Pozole Verde
Tomatillo and jalapeno stew with hominy, garnished with green cabbage, tortilla strips, radish, lime, chicharron de pollo, and avocado. Guerrero is the epicenter of pozole, a stew traditionally eaten year-round. In Mexico, it is served with a plate of garnishes, most often with chicharron de puerco. Mera is a halal kitchen, so we’ve created a chicharron from chicken skins in its place.$16.00
Ensalda de Coditos
Chilled pasta salad, pickled jalapeno, corn, carrot, onion, celery, mayo & crema dressing. Vegetarian. This salad is dedicated to Iris's children, born in the United States, in honor of their love for pasta. For Iris, it's a dish that lives between two worlds.$10.00
Tamale de Vegeteranio
Epazote, tomato, potato, onion, jalapeno, served with salsa verde. Vegan, gluten-free. In Guerrero, tamales are made with a softer, more liquid masa and wrapped in banana leaves rather than corn husks. Back in Mexico, Iris made them with chicken. Here, she makes them without, adapted for her children, to eat more vegetables.$12.00
Barbacoa de Chivo
Chili marinated braised goat, refried beans, white rice, salsa verde & avocado. Gluten-free, dairy-free. Barbacoa is for festivities. For Iris, it carries the memory of those moments back in Cahuatache, where local patron saint feasts brought entire communities together around large pots of barbacoa, cooked to feed everyone.$29.00
Pollo en Pipían Verde
Chicken leg quarter in pumpkin seed mole verde with epazote, refried beans, red rice, and pickled red onion garnish. Gluten-free, dairy-free. Pollo en Pipían Verde dates back to the pre-Hispanic period. Growing up in Cacahuatache, Iris remembers it by its aroma, the scent of epazote filling the air. A wild herb native to Mexico, its flavor resembles a more acidic version of coriander with a hint of lemon.$21.00

Mera Kitchen Collective is building a worker cooperative in Baltimore, serving story-worthy food from chefs from around the world. We offer take out, catering and host special events. We've provided over 170,000 free meals (and counting) for our Baltimore neighbors in response to COVID-19. Our name comes from the Greek word meraki, which refers to the act of doing something with so much passion you leave a piece of yourself in it. We hope you taste that when you enjoy our food!
