    Dried Beans

    • Eclipse Black Beans, 1 lb.

A classic, inky black bean, perfect for soups or as a stand alone dish. Eclipse beans are more of a Cuban or Brazilian style bean than Mexican, but we’re pretty sure you’ll love them however you choose to prepare them. Grown by Meadowlark Organics in Ridgeway, WI as part of a diverse rotation. We’ve done our best to clean and sort beans, but it’s always a good idea to pick through and give them a good rinse before you get cooking. Meadowlark Community Mill donates a portion of the proceeds from all bean and corn sales towards the Native American Food Sovereignty Alliance, an organization supporting Native communities to revitalize indigenous food systems.

    • Cranberry Beans, 1 lb.

Cranberry beans, also known as Barlotti or Roman beans, are a popular bean for stews and soups. They cook up to a plump pink bean which retains a faint pattern. We grow Cranberry beans interplanted with our Dakota Black popcorn, inspired by the Indigenous practice of planting "the three sisters." While Cranberry beans are technically a bush style bean, they do appreciate the extra support during the growing season. They benefit even more at harvest time, when the beans have dried down and use the standing corn stalks to stay upright. Grown by Meadowlark Organics in Ridgeway, WI as part of a diverse rotation. We’ve done our best to clean and sort beans, but it’s always a good idea to pick through and give them a good rinse before you get cooking. These beans are small, plump, and creamy and are great for soups and stews. We call them the “everything” bean, as they’re a good chili, refried, and baked bean. • Jacob's Cattle Beans, 1 lb.

Jacob's cattle beans are a type of heirloom bean with a rich flavor and a meaty texture that holds its shape well during cooking: Jacob's cattle beans are plump, oblong beans with white and reddish-brown specks. They are named for their resemblance to the spotted Hereford cattle. They have a rich, nutty flavor and are often used in soups and stews.

    • Dapple Grey Beans, 1 lb.

Dapple Grey beans are an heirloom variety which have a distinctive white and grey pattern, and share their name with the coat of a grey, speckled horse. We grew Dapple Grey beans interplanted with grain sorghum, inspired by the Indigenous practice of planting "the three sisters," with the sorghum acting as a living trellis for the beans. While Dapple Grey beans are technically a bush style bean, they do appreciate the extra support during the growing season. They benefit even more at harvest time, when the beans have dried down and use the sorghum plants to stay upright. Grown by Meadowlark Organics in Ridgeway, WI as part of a diverse rotation. Certified Organic by NICS. We’ve done our best to clean and sort beans, but we recommend picking through the beans and giving them a good rinse before you get cooking.
