    • 2022 Loop de Loop Dolcetto

      Our favorite Dolcettos grow in Dogliani, high in Northwestern Italy's Piedmont, sub-alpine region. We are extremely excited to have found Dolcetto on our little mountain on the edge of the Cascade Range. This varietal is at its best when challenged with our volcanic sandy-ashy-loam soils and windy conditions. It struggles to ripen at 1000 feet in elevation in the Hecate's Gate Vineyard - which gives us beautiful phenolic development that results from the extended time on the vine. Always one of the last varietals we bring in. This wine is bright crimson, youthful and energetic, with intense aromas of black raspberry and iris blossom. It's lively on the palate with ripe lapin cherries and wild strawberry which is balanced out with dusty tannins, mountain herbs and a long chalky finish. Docetto translates to "little sweet one" not to be confused - this wine is not sweet - but completely dry.

    • Dominio IV Technicolor Bat Tempranillo

      The wine has also received positive reviews for its natural, balanced qualities. Dominio IV's The Tango has polished fruit flavors and structured tannins. This wine comes from four different Tempranillo clones planted at the winery's estate vineyard in the Columbia Gorge AVA. Some reviewers have described the wine's profile as having notes of dark chocolate and espresso, complemented by dark fruit and spice, along with saddle leather, dried cherry, dusky spices and citrus spritz.

    • 2022 Loop de Loop Syrah Birdsong

      Just 25 miles east of our vineyard is a much warmer and drier climate. We love the Gorge for its dynamic variance in microclimates which allows us to work with a diverse amount of varietals. This Syrah was fermented with wild yeasts, 25% whole cluster. It received pigéage daily, twice daily during peak fermentation. Minimal intervention in the cellar, we did not add sulfur until after malolactic fermentation was complete. It rested on the lees in 2 Burgundy barrels for 22 months before hand-bottling unfined and unfiltered in our cellar. Less than 20 ppm SO2 and nothing else added. Violets, Provençal herbs and cracked pepper on the nose, the palate is full and explosive with supple dark fruit & ripe black currant leading way to white pepper & prosciutto with a dusty long finish.

    • 2022 David Hill Estate Pinot Noir

      Our 2022 Estate Pinot Noir showcases a classically cool vintage overall, with a dry and warm early fall, producing fruit with pronounced acid and full ripeness. Elegant and delicate, the wine shows vintage and place, highlighting an earthiness of Oregon forest, bramble and an interplay of black and red fruit. Intentionally made to drink in the present, and for years to come. In the Vineyard In 2022, the vintage in the Willamette and Tualatin Valley AVA’s started classically wet and cool, highlighted by a frightening cold spell and frost in April that reduced and damaged buds across the valley. David Hill experienced no damage, however, due to the location in the valley. Cooler than most areas, and behind in the growing stage, the vintage was protected. A cooler growing season overall and a dry late harvest season yielded high acid and full fruit, making for a physiologically ripe vintage.

    • Loop de Loop Gamay Noir

      High altitude gamay, 30% whole cluster fermented over 6 weeks into December before pressing. The fierce winds of the gorge make for thick skins, yielding an intensity that is balanced by its high altitude elegance.  As with all of our wines, this was fermented with native yeast. Nothing was added other than (<30ppm) sulfur. It was bottled unfined and unfiltered after 11 months in neutral French oak barrels.

    • Reheating Instructions

      CHICKEN: Both Five Spice and Roasted -BAKE 10-15 mins in oven safe dish covered with foil or AIRFRY 6-8 minutes. MAC N CHEESE/Pasta Bake: - BAKE at 325° for 15 to 20 minutes - If you like it crispy, UNCOVER and BROIL at 500° for 3-5 minutes MEATBALLS: - They are fully cooked and only need to be reheated. For a crispier meatball: - We recommend the air fryer at 350° for 8 minutes OR For a softer meatball: - Bake in oven (covered with foil) at 350 for 10-12 minutes OR in the microwave for 2 -4 minutes. SPICY PEANUT NOODLES - Reheat in skillet with 1-2 Tablespoons of water or Microwave 1 minute to start, stir and reheat in 30-45 seconds at a time until hot.
