Prime Angus brisket, rubbed with salt & pepper and smoked low and slow. We recommend about ½ lb per person.

Heritage Duroc pork shoulder, seasoned and smoked over cherry and hickory wood until tender, then hand-pulled. We recommend about ½ lb per person.

St. Louis–style full spare ribs, coated in our classic rub and smoked over hickory until tender. These full spares are meatier and larger than baby backs, with 10–12 bones per rack.
