Shirayuki Edo Genroku Junmai is produced using Hyogo Prefecture Yamada-Nishiki sake brewing rice milled to 88% of its original size. The Konishi Family have long been the guardians of old-world brewing traditions as documented in their uninterrupted daily brewing logs that date back to the late 1600s. Shirayuki Edo Genroku is a strong and complex and Junmai (Genshu), with an interesting salty sweetish haze. Dark chocolate, honey, yeast, dried corn as well as lime blossom and wood.
