Ceviche de Mariscos is a Palomar highlight. Oregon albacore tuna and shrimp tossed in a guava leche de tigre dressing and mixed with avocado, cucumber, pineapple, jicama, and topped with sweet herbs.

Mojo braised and fried chicken wings tossed in a pan sauce of mojo, butter and grandpa guero's hot sauce. Served with pickled red onions.
