    • Bresaola

      This unique Bresaola uses Porcini and Black Pepper. A dry-cured beef round that's elegant and lean, but when seasoned with porcini mushrooms and black pepper, its flavor gets funky and deep. Slice thinly and serve with arugula, Parmigiano and a nice olive oil.

      French darling. They wash each little cow's milk round with brine and then rub it with raccou, a natural colorant derived from a tropical shrub. The elegantly wrinkled rind adds textural interest and develops a dense cream that is cakey at the core with a luscious creamline and distinctive porcine savoriness. Langres's signature, though, is its concave cap, designed to cradle a splash of terroir-appropriate Champagne. Cut a small slit into the middle to allow the bubbles to transform its demure fudginess into a brioche-laden creambomb. Cheers to a cheese that just might make a Francophile out of you.

    GOAT'S MILK

    • Drunken Goat

      This cheese encouraged me to open a cheese shop. This semi-firm pasteurized goat treasure from Spain's Mediterranean coast is cured for 48-72 hours in Doble Pasta red wine. The paste remains nearly pure white as the rind absorbs a lovely violet hue. The paste is sweet and smooth, delicately grape-y, with a gentle, pliable texture and mild fruit flavor. A D.O.P cheese, it pairs well with medium fruity reds. And you have to love the name.
