Farming: Biodynamic Flavor: lemon, orange zest, lime, pear, grapefruit pith, a dash of saline Envidia Cochina Albariño is a young white wine made by Eladio Piñeiro in the D.O. Rías Baixas (Galicia) with the Albariño variety. Envidia Cochina Albariño comes from unique terroirs located in the Salnés Valley (Pontevedra). These are vines aged over 30 years old planted on sandy loam soils and cultivated according to biodynamic principles and following lunar and cosmic cycles. When the grapes reach optimum ripeness, they are harvested manually. In the winery, the Envy Cochina Albariño grapes go through a selective process where they macerate for between eight and ten hours. Spontaneous fermentation then begins with native yeasts at a low temperature with prolonged aging on its own lees for 6 months. Finally, a coupage is made with 15% of the wine from the previous vintage. .

Bold, chalky minerality on the compact palate that’s remarkably sleek for this grape. Then comes the super-salty finish that almost knocks you off your chair. From vines planted in 1991. From biodynamically grown grapes. Drinkable now, but best from 2024." 95 points. James Suckling, JamesSuckling.com, (August 2022)

And Muscadet Sèvre et Maine needs no explanation because it is well known as the top sub-area of the greater Muscadet region, which surrounds where the Loire River meets the Atlantic Ocean. But what is Monnières-Saint Fiacre, and why am I enthusiastic about a five-year old Muscadet, a wine that is typically drunk within a year or two of the harvest? The French wine authorities have identified several villages (crus), like Monnières-Saint Fiacre, within Muscadet Sèvre et Maine that are capable of producing exceptional wine that must be aged longer before bottling. This impeccably balanced and racy one from La Pépière combines depth and minerality with a chiseled backbone of acidity that makes it a joy to drink. With seafoo

The robe is salmon pink. It is animated by a persistent effervescence which gives birth to a cord with fine and delicate bubbles. This wine develops intense red fruit aromas, mainly wild strawberry, wild raspberry, cherry and red currant. After a few minutes of airing, a light floral scent awakens our senses with notes of lime and lilac. In the mouth, the attack of red fruits is predominant and supported by the freshness of pink grapefruit. A delicate perfume of melon and vine peach animates our taste buds during the tasting. $93.00 - Guy Larmandier 375ml C14
Farming: Sustainable 100% Chardonnay From Chardonnay vines in the Grand Cru village of Cramant. The total absence of any sense of sweetness in this Brut Zéro allows the limestone to take center stage, and it presents in a more piercing and saline manner than in Larmandier’s Brut wines. Despite its relative rigorousness and austerity, however, this is by no means a difficult wine. Rather, it will appeal to those who relish the sort of palpable, intense mineral character Champagne is capable of when made in such a straightforward fashion. Aged 3 years sur lattes.

Not so long ago it was close to being an endangered style, but over recent years there's been a massive revival; especially in the US. This is a very complex style; many are very fruity in the aroma and flavor. Look for earthy yeast tones, mild to moderate tartness. Lots of spice and with a medium bitterness. They tend to be semi-dry with many only having touch of sweetness.
