The name "Strev" refers to the hills where the Moscato grapes are cultivated. The Moscato grapes grown here are known for their exceptional ripeness due to the warm microclimate and steep hillsides. The juice obtained from the pressing of the grapes is maintained at low temperatures until the time of refermentation which takes place in pressurized tanks. Once the alcohol reaches 5.5, fermentation is halted and the wine is bottled with its natural vivacity.

While Didier Dagueneau, the "wild man of Pouilly," is no longer with us (sadly, he died in a plane crash in 2008) his legacy lives on at the domaine he built, which is now run by his son, Louis-Benjamin. Produced from vines averaging 15-50 years of age, planted high on the slopes of St-Andelain in vineyards that boast large proportions of Silex. Aged in 450 and 600-liter barrels, as well as some of the famed "cigar" barrels that Didier designed. This is the estate's Grand Cru, a long-lived wine that is famous for drinking rather austerely in its youth, but evolving into some of the best examples of Sauvignon Blanc ever made. *Biodynamic*

Dehlinger’s Chardonnays are crafted using traditional techniques which preserve the flavor and elegance of the variety. At harvest, the grapes are picked at night, brought cold into the winery and “whole cluster pressed” to extract the highest quality juice. From there, the juice is fermented in French oak barrels using native yeasts. The wine gains further complexity through malolactic fermentation and a year of aging on the lees. Dehlinger has been bottling its Chardonnays “Unfiltered” since the late 1990s in order to capture the full flavor potential and most pleasing texture possible.

The concentration remains but the register has changed; lying between very ripe pears and nuts – Brazil nuts and pecans, almonds, and not far from walnuts either; at the same time, a sweetness evoking sweet almond oil, hazelnut, a white peach halo, sensual white flowers – opened wide, white roses in particular, a touch of menthol excites the nose, with a tendency to swell, bringing freshness and energy; the nuts now combine with white chocolate, a touch of crème fraîche; broom flowers add to the growing charm of the whole, a note of vanilla; and finally there’s something like gougères, or even cream puffs.

Côte Chalonnaise is situated South to the Côte de Beaune (after Santenay). There are five main appellations in this area : Aligoté de Bouzeron, Rully, Mercurey, Givry et Montagny. Givry vines are situated around the village of Givry, between Mercurey and Montagny, and around the three hamlets of Poncey, Cortiambles et Russilly. Its chalky brown soil, as a result of the weathering of Jurassic limestone, has given rise to a village appellation often compared to Volnay.

It's fair to assume that with alcohol dropped down to the low 12% range, this is going to be a highly acidic wine. That it is, but along with the zippy, lemony acidity comes nuanced flavors of lemon zest, green pineapple, green banana and a hint of peanut butter in the finish. The wine was barrel-fermented in mostly neutral French oak.

After an average of 16 days of fermentation on the skins, the lots were then individually pressed off and settled before being transferred into barrels for 30 months of aging.

This is an old-world style wine offering many layers of black and red cherries, raspberry, strawberry, blueberry which then go into a more aged fruit of figs, prunes and dates. Next to the fruit is some black olives, truffles, a touch of the forest floor and a hint of graphite. Behind these layers is a soft spice note of cinnamon/nutmeg. The oak is well structured with the fruit and earth notes. The tannins are big but very approachable. Overall the wine is very well balanced with a lot of old-world charm. The red 2017 Reserva, which is sold as Crianza in Spain, is their most popular wine, representing half of the total production of the firm. As is the norm here, it fermented in oak vats and matured in barrels, in this case for 24 months, crafted by their own coopers. The wine is fined with egg whites and kept in bottle for a further 12 months before it's released. I had the wine in the glass for a very long time, and it didn't stop improving; it started a little lactic and creamy, and then it got more and more serious. This is the only red they produced this vintage, so all the best grapes that normally go to other wines were used here; those selected grapes helped to keep the volume of this cuvée, and at the same time, it seems to have boosted the quality of this wine, which feels every bit as good as the 2016. It has a serious palate with fine, chalky tannins and very good balance.

The aroma springs out of the glass with black pepper, tapenade, licorice and herbs of Provence. The fruit aromas of the wine hit high red notes along with the obvious darker impressions of fruit, like black mission figs. On the palate, the wine carries a massive structure that calms down with a little air. Good luck on keeping your hands off of this when you open it.

The wine is fresh and fruit forward with bright berry aromas over easy spice and smoky tar.
