(Maine / 6.7% / 375 ML / Single) Belfius combines two of Belgium’s well-known beer styles: a spontaneously fermented ale and a saison. The spontaneously fermented ale is also known as Allagash's Coolship beer. The name comes from a key brewing tool—the coolship—that allows the beer to be inoculated with wild yeast and other microbiota. After inoculation, the beer ages in oak barrels for up to three years. The second beer in the blend is our Saison, a dry ale defined by its notes of citrus and peppery spice. Blended together, they create a golden beer with an herbal aroma that contains both spice and tart fruit. Its taste is one of restrained sourness rounded out by a hint of oak.

It is fermented for 2 years in stainless steel tanks with a blend of a traditional Saison yeast and Brettanomyces. Before packaging it's dry-hopped with a blend of German and American experimental hops. Golden in color, Century Ale has aromas of toasted crackers, passionfruit and citrus. Complex flavors of biscuit and fruit are followed by a dry, slightly tart finish.

The unfermented wort is then transferred to a large shallow pan called a coolship, which allows the hot wort to mingle with wild yeast and souring microflora in the Maine air. After fermenting and aging in French oak wine barrels for over two years, they add blackberries and let it rest for an additional five months. The finished beer’s aroma exhibits hints of lime zest and an herbal, berry-like quality. The tart flavor evokes multiple facets of blackberry, including just-ripened fruit and rich, juicy berry.

(Maine / 7.1% / 375 ML / Single) Tiarna is a blend of two beers, one aged in oak and fermented with 100% Brettanomyces, and the other fermented in stainless steel tanks with a blend of two Belgian yeast strains. Both beers were brewed with a combination of 2-row and wheat malt, in addition to specialty grains. It was hopped with Hallertau, Styrian Goldings and Cascade. The finished beer is dark golden in color with citrus, pineapple and bread in the aroma. The flavor of this tart beer has notes of grapefruit, lemon, and bread crust, and a long, dry finish.

The beer sits on the hops for 3-4 days, extracting only the bright and citrusy character from the hops. After roughly half of the beer is bottled to make Jumpseat, there is a second dry-hop addition and the remaining beer rests for an additional 3-4 days, creating more grassy, earthy flavors. This version features Centennial and CTZ hops.

(Colorado / 5.0% / 500 ML / Single) This is a blend of Lambic-inspired, spontaneously fermented beer, brewed in accordance with the Méthode Traditionnelle guidelines. It's aged for one, two, and three years in neutral oak then combined with freshly-picked Neomexicanus wet hops from Voss Farms in Arvada, Colorado. They further aged the beer for two weeks in more than 20 pounds of hops in each of several freshly emptied red wine oak barrels. The slightly sour and funky base beer melds with sweet pine, melon, and berry characteristics from the hops. Wild microbes like Black Project's are known to be able to bio-transform hop aroma compounds and flavor compounds, releasing new and interesting flavors from the hops as the beer ages.

(Hainaut / 5.8% / 375 ML / Single) One of the most interesting Blaugies beers, Darbyste is a fantastic dark Saison brewed with fig juice that's named in honor of John Darby, a preacher whose parishioners were “oddly moved” by the fig juice that Darby claimed to be a “soft drink.” This beer is amber in color and the flavors of figs are quite faint, as the sugar from the fruit has been fermented out. Light, refreshing and spritzy, this beer is excellent for summer.

(West Flanders / 9.0% / 330 ML / Single) Oerbier, meaning “original beer,” is the beer that originally inspired the Kris and Jo Herteleer to buy the old and defunct brewery. It is bold, just like the other offerings, and is quite malty. To balance against the malt, they use Poperinge-grown Goldings, an English hop varietal known for mild bitterness and good florality, which lines up nicely with the aromas and flavors from the house yeast being used. With aging, Oerbier can become tart through refermentation in the bottle, resembling a beer that has been blended with white wine. The brewers also utilize lactobaccillus for a slight tartness that will develop with time. Nice and complex, this beer is also fantastic with Belgian fare.

It is both bitter and aromatic thanks to particularly generous hopping, while at the same time developing a vinous and tangy character thanks to a blending with old lambic from the Cantillon brewery. Ripened in oak barrels for 9 months and listed at 4.3% abv.

Brewed with an IBU-bitterness of 100, the beer matures in oak foeders over a for nine months before reaching it's unique taste. Originally brewed for the 10th Anniversary of Moeder Lambic Original.

(Hainaut / 7.0% / 750 ML / Single) Cuvée de Ranke is an ale of mixed origin, like those that many Belgian breweries used to make. The production process is nearly the same the brewery's Kriek de Ranke, the difference being that no cherries are added. It’s a naturally acidified ale that displays an adept balance between sweet and sour. While the brewers deliberately age this beer at the brewery, it can indeed be laid down for a long period of time. A magnificent and elegant sour, each sip has notes of fruit, mild spice, awesome tartness, and a malty yet dry finish.

For complexity, they added some of the marvelous "Jacobins Foederbier" (i.e., Cuvée des Jacobins) from their neighbors at Brewery Omer Vander Ghinste.

(Flemish Brabant / 6.5% / 750 ML / Single) This Doesjel was bottled on the December 1, 2020, and was intended to be an Oude Geuze. Because of the high proportion of older lambikken, the fermentation did not continue in the bottle and the blended lambik beer remained flat. The yeast dozed in, hence the name – a local dialect for that typical little sleepy knock you get over noon. In return, with a natural-white-wine-like aroma and malty citrussy taste, the resulting beer is a subtle lambik blend, with a weighted average age of about 30 months upon its release. The oldest lambikken were brewed at the beginning of 2018. This is the first Doesjel in 750 mL bottles since 2006.

(Flemish Brabant / 7.7% / 750 ML / Single) For this, Druif, 3 Fonteinen co-fermented Belgian Dornfelder wine grapes with one- and two-year old lambik in a 53/47 cut. They used the freshly pressed and shortly skin-macerated juice and put the unfermented juice with young lambik for continued fermentation in stainless steel. Afterwards, they blended with two-year old lambik. All lambikken originate from seven different barrels and seven different brews. The final fruit intensity is 31.6%.

(Flemish Brabant / 8.3% / 750 ML / Single) For this Druif/Kriek, 3 Fonteinen blended a Belgian Dornfelder druivenlambik (lambic with wine grapes) and a kriekenlambik (lambic with cherries) in a 50/50 proportion. They used both young and two-year old lambikken, originating from nine different barrels and nine different brews. The combined maceration took eight months and the final fruit intensity is 510 grams per liter of sour cherries and freshly pressed, skin-macerated grape juice.

(Flemish Brabant / 9.1% / 750 ML / Single) This Druif features the Muscaris wine grape variety, a crossing between Solaris and Muskateller. This rather young variety originates from the Freiburg region in Germany and combines an intense muscat bouquet with a higher sugar density than other Muscat varieties (especially when harvested slightly late). Anyhow, 3 Fonteinen put the grape must with fifteen-months old lambik on a small oak foeder. The lambikken that they used for blending was a three-year old lambik (and makes up more than 10% of the total volume). The final fruit intensity is 469 grams of Muscaris grapes per liter of Druif. This is 100% 3 Fonteinen brewed lambik.

This was the first of such blends to be released. Sour cherries were macerated partly on young peated lambik and partly on two-year old straight lambik in a stainless steel tank. Specifically, Texas homebrewer Dustin Kirkland grew several dozen pounds of Cascade in his backyard. The water came from the Trinity Aquifer below Jester King. The barley and wheat were grown in west Texas and malted by Blacklands Malt, and the hops came from Dustin's backyard in Austin. The all-Texas wort was chilled in our coolship and 100% spontaneously fermented with native yeast. After about two years of maturation in oak barrels, it is blended and bottled.

(Texas / 4.2% / 750 ML / Single) The full name for this beer means "collaboration beer with Czech hops, wild yeast, and bacteria” in German. In making Kollaborationsbier, Jester King brewed a low gravity wort at Live Oak with Head Brewer Dusan Kwiatkowski. The wort was prepared using a traditional decoction mash, beginning with undermodified pilsner malt and then working it vigorously by separating out a portion of the mash, boiling it in the kettle, and then returning it to the mash tun. They then added a few hefty doses of Czech hops to the boil for a firm bitterness and floral, spicy hop aromas and flavors. After brewing and cooling the wort, They racked it into portable tanks and drove it from east Austin to the outskirts of town in the Texas Hill Country where Jester King Brewery is located, transferred it into one of their fermentation tanks, and inoculated it with their unique mixed culture of brewer’s yeast and naturally occurring wild yeast and bacteria.

The Guajillo honey was collected by Koch Ranches in the Hill Country and the Eureka and Ujukitsu lemons were grown at River’s End Nursery in the Rio Grande Valley. Queen’s order was brewed on February 13th, 2017 with Hill Country well water, organic pilsner malt, malted spelt, rolled oats, Perle hops, Guajillo honey, and Texas lemons we dried in-house. It was fermented in stainless steel with Jester King's mixed culture of brewers yeast, native yeast, and native bacteria.

Centennial hops were used for bittering with aroma additions of Cascade hops from both the Pacific Northwest and Michigan. After completing its primary fermentation in Jolly Pumpkin's open top fermentation vessels, La Vida Improvisaciòn was transferred to an oak foeder where it aged for 6 months. Coming out of oak, they dry-hopped it with Amarillo, Citra and Chinook hops before packaging on March 24th, 2017.

(Namur / 11.3% / 330 ML / Single) In 1952, in order to place the modernisation of the brewery on the right commercial footing, much care was taken with the launch of Rochefort's two new beers. The refectory beer had been the basis for the development of the ‘Middel’ (also known as ‘Merveille’) which became the Rochefort 6. The 10, however, needed something else to elevate it: Belgian candi sugar, steeped in the wort in metal baskets, quite an innovation in those days. Furthermore, two malts were used in the brewing process: pilsner and caramel malt, as well as wheat starch, two varieties of hops and Rochefort’s own yeast. The result was the powerful Rochefort 10, a beer sure to warm your heart with its robust dose of alcohol.

It has a fruity aroma, full of complex flavours and excels because of its long bittersweet finish with a hoppy bite. It tastes like the home-pickled lemon peel I keep in my fridge (how to not waste lemon peel…) with that wonderful edge of bitterness and tang and citrus oils, but tempered a little by the saltiness and pickling. Great fun and so very, very refreshing. If you wanted a manzanilla sherry, but didn’t feel like the alcohol, then this is your drink. Bring on the boquerones…

Les Equilibristes is the project of winemakers Francois de Monval and Florent Girou. Together they produce one of a kind, quirky cuvees from small estates all across France. Their central focus is to seek wines that possess “Equilibre", or balance. Each year, they visit growers and purchase a select amount of organic grapes that express a clear identity and sense of place. de Monval and Girou practice minimal intervention winemaking with little to no added sulphur, resulting in this 2018 Picpoul de Pinet that offers an energetic palate with impressive texture and bright citrusy notes that make it a perfect sipper for pairing with fresh seafood and salads.
