The inspiration for this style of biscotti comes from northern Tuscany, where they are called cantucci. This simple, twice-baked cookie traditionally consists of only: flour, egg, sugar, and almonds. Of course we’ve expanded on that concept a bit, but have stuck to the original idea of adding no butter or milk. Additionally, our biscotti are made with a blend of almond flour and oat flour, and therefore are gluten-free!
