The finish is concentrated and persistent, again stone fruit appear, albeit in candied form, along with a hint of white pepper and plenty of orange zest.

This wine reminds me very much of a Chardonnay from Meursault. The nose is exotic and engaging with lemon meringue and buttered brioche aromas touched off by a hint of flint smoke. The fruit on the palate adds a little baked lemon and crème brûlee notes. The texture on the palate is silky and the various aromas are knit together and harmonious making this wine ready to enjoy now. The wine finishes with a freshness and a hint of saltiness.

It has a bright ruby colour and there are sweet red cherries, mulberries and plums on the nose with a hint of tea tree and liquorice. The blend of 50% Grenache, 25% Syrah and 25% Mourvèdre has a cedary, vanilla-tinged overlay, but it also has plenty of rich, ripe cherries and stone fruit. Full-bodied, creamy and lush, it nevertheless allows a dusting of dry earth and spice notes to come through on the finish. It's a complete wine that should drink well for a decade or more.

Michter’s US*1 Rye is surprisingly full of flavors. There is fruit, caramel and brown sugar that would not be necessarily expected, and there is the possibility that one might mistake this for a high rye bourbon. The nose is almost like a pear and cherry cobbler. The rye makes itself known more so in the finish, where the black pepper spice grows, although there are more subtle rye flavors in the nose. Due to the lower alcohol, I am left with a nice lasting warmth on the finish, rather than a “burn”.

When the bourbon reaches maturity, we intimately blend a small batch of no more than 15 barrels to create the finished product. This marvel of modern distillation wows the sense with lovely aromas of spice and fresh apples. When sipped, you experience honey, mint and creamy orange. As Cavehill falls to the back of your palate, it evolves into vanilla and custard. There’s a great standard bourbon smell as soon as this ‘glugs’ out of the bottle and into your glass. It’s got some good brown sugar sweetness with a bit of butter in there, some vanilla around the edges, and just a hint of sourdough bread. Also in there is some citrus in the form of a little bit of lemon zest adding some brightness. Taking a sip, the charred oak flavors are large and in charge. There’s some charred caramel in there and a good bit of vanilla, and at times the flavors combine to muddle together and just come across as charred wood. It’s nicely sweet in the middle, with a good bit of brown sugar, sometimes a touch of that cherry pokes through, and finishes with some cinnamon spice and a light cherry flavor.

In 1801 Josiah Bent of Massachusetts began baking and selling 'water crackers' made from flour and water that wouldn't deteriorate during long sea voyages. During baking, a cracking sound occurred and it is from this that the American term 'cracker' originated. As tradition dictates we only use 100% English flour and English water to make our crackers and bake by toasting under flames for 1 minute. The result is a cracker that is ultra-crisp, with a dark, 'nutty' taste.
