Garnatxa negra is macerated overnight, then aged in steel with 50/50 garnatxa blanca and macabeo. An initially acid-driven, palate with bright raspberry fruit and a little herbal streak gives way, after a quick decant or a day open, to a bit more dimension and flesh: wild strawberries, Mediterranean herbs, sea salt. 750mL

Fancy Stuff
- BT Champagne Solera. Olivier Horiot. France.$200.00Out of stock
Grapes: Chardonnay, Pinot Noir, Pinot Meunier, Pinot Gris, Arbane, Pinot Blanc, Pet. A Champagne made with all seven allowed varieties of region using a solera method like that used in Sherry production. A rare treat, seldom available and a chance to try a truly unique Champagne. The solera method adds an aspect of oxidation to the wines that shows a spice and mushroominess.
- BT Champagne. Chantal Decelle-Lassalle and Angéline Templier Premier Cru. France.$210.00
Grapes: Chardonnay, Pinot Noir, Pinot Meunier. Champagne J. Lassalle works with all three varietals authorized in the region (Chardonnay, Pinot Noir, and Pinot Meunier) on sixteen hectares of vineyards, all of them premier cru. These tough, hardworking women continue to follow the vinification methods established by Jules in the forties: they use the same wooden basket press he installed in the winery over fifty years ago, pressing and vinifying the individual plots separately. It is one of the rare Champagnes that has been allowed to finish its malolactic fermentation, just like the great whites from the Côte d’Or, and all cuvées are aged extensively once in bottle—even the non-vintage cuvées, which are a minimum of five years old. This results in an astonishing complexity and depth from the beginning of their range up to the luxury cuvées.
- BT Pinot Blanc. Domaine Ostertag. "Les Jardins". France.$109.00
Wine: White. Varietal: Pinot Blanc. Region / Appellation(s): Alsace. Vintage: 2018. Notes: Ostertag’s gorgeous barrel-aged Pinot Blanc is an ethereal, supremely fine glass of wine, as if they figured out how to bottle clouds. Lower acidity, medium bodied. Peach, apricot, stone.
- BT Riesling. Meyer-Fonné. "Pfoeller". France.$119.00
Varietal: Riesling. Region / Appellation(s): Alsace. Vintage: 2015. Notes: Pfoeller is one of the gems of the Meyer portfolio, from a vineyard on the eastern edge of the hillside dominated by the grand cru Sommerberg. The granite turns to limestone here, with dramatic results. Off-dry, light bodied, high acidity. Great minerality, stone fruit, citrus.
- BT Bourgogne Aligote. Domaine Roulot. Burgundy, France.$139.00
Varietal: Aligote. Region / Appellation(s): Burgundy. Vintage: 2019. Notes: Citrus, green apple, minerals. What sets the domaine even further apart is Jean-Marc’s commitment to a bright, chiseled, thoroughbred style of Meursault, while many other wines of this village tend towards richness and concentration. Jean-Marc’s wines certainly express a certain depth and sumptuousness thanks to the appellation’s terroir, however his wines also show focus and restraint. Their elegance and amazing precision lend themselves to long aging in the cellars. Jean-Marc loves cooking and believes the strong mineral backbone of his wines and their fresh acidity marry well with food.
- BT Bandol Rosé. Domaine Tempier. France.$89.00
Rosé Wine. Varietals: Mourvèdre, Grenache, & Cinsault. Vintage: 2021. Tasting Notes: If we were the only ones to call this wine the greatest rosé of all time, it would be hubris. It offers entrancing aromas of crushed stone, peach and raspberry on the nose. On the palate, it's silky, medium-bodied and intense, with plenty of bright, zesty lime on the long finish.
- BT Morgon. Jean Foillard. "Côte du Py". France.$99.00
Red Wine. Varietals: Beaujolais. Vintage: 2018. Tasting Notes: The dark ruby robe, gorgeously perfumed fruit, and silky long finish of this intoxicating cru are a force that can’t be reckoned with. Discover it for yourself.
- BT Pinot Noir. Domaine Follin-Arbelet, Pernand-Vergelesses. Burgundy, France.$169.00
Varietal: Pinot Noir. Region / Appellation(s): Burgundy. Vintage: 2018. Notes: Franck Follin-Arbelet has occasionally referred to his Fichots as “rustic,” but that tells you more about the incredible elegance of his other cuvées than it does about this wine. Sure, it has a little grip, but plush notes of red fruit and cocoa abound in the glass. This Pernand punches way above its weight.
- BT Monthelie. Domaine Roulot. France.$360.00
Wine: Red. Varietal: Pinot Noir. Region / Appellation(s): Burgundy. Vintage: 2017. Notes: One of the rare red wines to emerge from the Roulot cellars, the Monthelie comes from two parcels of roughly 40-year-old vines situated between the villages of Monthelie and Auxey-Duresses. The fruit is entirely destemmed before a fermentation lasting twelve days, then one year aging in barrels with a small percentage of new oak. As with the domaine's whites, there is beautiful purity and restraint, with low extraction and lovely aromatic finesse. With floral notes and bright red fruit, it is elegant enough to be enjoyed now, but can also be cellared for several years.
- BT Syrah. Domaine Gramenon. "Sierra Du Sud". France. 2015$79.00
Wine: Red. Varietal: Syrah. Region / Appellation(s): Côtes-du-Rhône. Vintage: 2015. Notes: While many view the Gramenons as avant-garde revolutionaries for championing organic and biodynamic viticulture along with nonintervention in the cellar, these seasoned vignerons humbly point out that “thirty years ago, we called that working normally!” Their sole Syrah bottling is made from low yields of hand-harvested grapes that see a wild fermentation and seven-month élevage in a combination of tanks and old barrels. True to the Gramenon house style, it is silky, aromatic, and full of local flavor: lavender, black olive, and ripe blackberry.
- BT Vin de Pays des Côtes Catalanes (Carignan/Grenache). Domaine Vaquer, Fernand Vaquer 1985. Languedoc, France.$150.00
Varietal: Carignan/Grenache Region / Appellation(s): Côtes Catalanes, Languedoc. Vintage: 1985 Notes: Very fruit forward nose. Strawberries, cherries, blackberries, and blackcurrants. There are some subtle savory notes too. Light bodied, dry with soft tannins and medium+ acidity that lingers on. Generally fruit forward with some light spiciness.
- BT St Joseph Rouge. Faury. France. (2016)$99.00Out of stock
Saint Joseph Rouge: Vines are located around the domaine, planted on steep slopes (up to 35%) facing south, south-east. Hand harvested and 60 to 70% of grapes are de-stemmed. Fermentation lasts 15 to 20 days. Aged for 12 months in foudres (24 – 35 hl), demi-muids (600-L), barrels (228-L); only 10% new oak is used in the rotation of barrels. Suggestions of violets, black olive, blackberry, and peppery spices soar from the glass, and the wine graces the palate with a featherweight touch—that’s the Faury signature. From its floral nose to the bright, supple finish, this Syrah is a perfect example of traditionally styled Saint Joseph.
Party-Size Wines
- BT Brut Cava. Bohigas. Spain.$115.00Out of stock
Made from a classic blend (for this area) of Xarel-lo, Macabeo and Parellada planted in limestone and clay soils, the wine spends 24 months on its lees before disgorgement. It is an excellent value for consumers looking for alternatives to French Champagne. Lemon/lime, crushed rock and white currant notes are present in this crisp, elegant, refreshing, zesty, dry sparkler. Hints of wheat thins and brioche add complexity.
- BT Rosé. Rumor. Côte de Provence.$175.00
Size: 1.5L (Magnum). Varietals: Grenache, Cinsault, Syrah, Mourvèdre and Vermentino. Vintage: 2022. Tasting Notes: Ruor Rosé deliciously blends Grenache, Cinsault, Syrah, Mourvèdre and Vermentino grapes, resulting in a dry flavour profile, without any bitterness. With zero residual sugar, Rumor is light, chiselled, and full of flavor, holding a classic pale pink hue that carries delicate citrus and fruit aromas. The easy drinking rosé has an abv of 13% and holds a clean-cut mouthfeel from the very first sip, finishing crisply dry with a stony touch, to evoke the ultimate sense of class and elegance.
- BT Morgon. Jean Foillard. "Côte du Py". France.$175.00Out of stock
