Coffee Blends

Big Joy is a slightly more developed roast than Skyline, and pairs exceptionally well with milk. We use Big Joy for all milk-based drinks in our cafe and it brews a dynamic, layered solo shot as well. But don’t count it out as a filter option! It will be delicious and sweet brewed with your favorite brewer. Our current Big Joy is a blend of Guatemala Chochajau from near Lake Atitlan and La Providencia from Huehuetenango. Together these coffees produce a densely sweet brew showcasing complex sugar flavors and crisp fruit character.

For Skyline, we select and roast coffees that produce articulate sweetness, complexity, and body. Our roast profile is optimized for espresso extraction. Our current offering is a blend of two outstanding coffees. Colombia Robinson Pillimué lends butter cookie sweetness balanced with juicy lime notes. Ethiopia Kawo Kamina contributes lively flavors such as orange zest, apricot, and vanilla. Together these coffees produce a brew with crisp fruit character and resonant sweetness.

- Struttura, 12 oz.$22.00
Struttura is an espresso blend focused on texture. The shots are dense and syrupy. The flavors are sweet, weighty, and dimensional. Currently it is composed of Guatemala Sierra Las Minas, Honduras Capucas, and Ethiopia Guji. Together these coffees produce sweet notes of dark chocolate, plum, and molasses, with a full, honey-like body. Struttura is easy to dial in and excellent for espresso, but it also brews a vibrant and balanced cup of drip.
- Moonrise Blend 12oz.$22.00
Moonrise is a blend of Ethiopia Sayfo Jago natural from Guji, and Colombia San Antonio- a producer blend from the San Antonio vereda of Inzá, Cauca. Together these coffees produce a syrupy brew with pronounced fruit notes. We particularly love this blend for espresso. Naturally processed coffees keep the whole cherry intact during drying, which imparts intense fruit character and body to the cup. Sayfo’s coffee lends juicy notes of lemon and raspberry while Colombia San Antonio is fully washed and adds complex sweetness and refreshing acidity.

Goodnight Moon consists of carefully selected small batch decaffeinated coffees. The roast profile is well-suited for all brewing methods. This offering comes from the COOPAFSI cooperative in the San Ignacio province at the top of the Cajamarca region in northern Peru. Farms within the co-op are located in the buffer zones of environmentally protected areas and must operate with particular sensitivity to their natural landscape. This means working with organic methodologies to ensure a commitment to the protection of wildlife and native species. Local creatures that inhabit these areas include spectacled bears, jaguars, and tapirs—hence the tapir’s appearance in the name of this special coffee. Red honey processing, in which about half the mucilage is left on the coffee seed before drying, results in a sweet cup with notes of raspberry, cherry, pound cake, and raisin.
Single Origin Coffees
- Ethiopia Konga, 12 oz.$22.00
Yirgacheffe | Heirloom | 2200 masl | Washed Another elegant offering from south central Ethiopia, Konga brings an assortment of sweet, crisp, and floral notes. The cup opens with intense floral aromatics such as jasmine and lemon verbena. In the cup we taste an array of sweet fruit notes such as lychee, kiwi, and meyer lemon. This coffee was produced by smallholder producers living in the mountains surrounding the Konga washing station in the Konga kebele of the Yirgacheffe woreda in Ethiopia’s Gedeo zone. Ripe cherries were delivered by 450 producers to the washing station, which is operated by Teshome Gemechu.

West Arsi | Heirloom | 1600-2000 masl | Natural pomegranate, milk chocolate, blueberry Mengestu Admasu Bezabh’s coffee was a national jury selection at this year’s Cup of Excellence competition. Mengestu is forty years old with three children, and ten years of farming experience. His property is just under a single hectare, planted entirely with coffee, which is considered average in size for Ethiopia. This natural process microlot was handpicked and dried on raised beds on Mengestu’s own property, carefully supervised and sorted specifically for the COE competition.
- Peru Amazonas, 12 oz.$22.00
Lonya Grande | Caturra, Typica, Catimore | 1650 masl | Washed grapefruit, raw sugar, cinnamon Peru Amazonas brews up a sweet, citrusy, and floral cup. Here we have a coffee grown within the northern Amazonas region of Peru, but tastes like it could easily be a washed offering from Ethiopia. It’s always exciting to taste coffees from countries that challenge or exceed expectations. The importer of this particular lot asked the cooperative to produce an 85-plus scoring coffee, and they certainly produced something special. Cooperativa de Servicios Multiples Juan Marco El Palto (JUMARP) is a small and focused cooperative in northern Peru that manages coffee from more than 300 farmer associates. The cooperative was formulated in 2003 with 35 local producers in the Lonya Grande district, part of the greater Amazonas department, and now the coop represents coffee growers across the highlands of Amazonas, as well as neighboring coffee powerhouse department, Cajamarca.

Huehuetenango | Bourbon & Caturra | 1900 masl | Washed red apple, hazelnut, blackberry A dynamic offering from Huehue, Los Suspiros balances syrupy body and hazelnut sweetness with fresh red apple, plum, and blackberry undertones. As the 4th generation to own and operate Finca Los Suspiros, Axel Palacios is dedicated to specialty coffee production.The farm was named Los Suspiros, which means “the sighs” in Spanish, because of the fresh breezes of air you can experience whenever you pause to appreciate one of the incredible views. Today, Axel and the Morales brothers operate Finca Los Suspiros as part of their joint venture, Rosma Coffeelands. The Rosma team are frequent Cup of Excellence winners and their commitment to specialty coffee production is evident in each lot.

When exceptional terroir meets skilled processing, beautiful things can happen. This honey-processed offering from Kenny Adarme is a delicious example of this equation. The resulting cup is sugary sweet with notes of lychee, cocoa, clove, and red apple. Kenny is a grower in Aponte, Nariño and a member of the Inga indigenous community, who make up the “resguardo” or reservation, of which Aponte is a part. His one hectare farm, named La Chorrera, is located at a whopping 2200 meters above sea level. Unlike many other young people in Aponte, Kenny decided to stay in his hometown and build upon the farming tradition started by his grandparents.

- Honduras Nery Martinez, 12 oz.$23.00
Nery only produces a tiny quantity of Paraneima, a variety known for its intense aromatic qualities, and we are pleased to offer this very limited release of his coffee. In the cup we taste notes of honeydew melon, lemon, raw sugar, and black cherry. For Nery Martinez, growing specialty coffee is a focused family endeavor on their farm, La Montaña, in the village of Los Andes, located in the municipality of Las Vegas, Santa Barbara. Nery’s father was a vegetable farmer and, for many years, the family also picked coffee in the area. Over time, Nery and his brother became interested in growing coffee on land they inherited from their father. In 2018, Nery started planting his first farm on the highest elevation plot, with the help of his brother they planted a large lot of Pacas. They have started growing a small volume of Paraneima and we are excited to offer this extremely limited offering.
