Tacos Valentina corn tortillas are made from nixtamalized masa which they make with heirloom corn varieties grown in Mexico. We offer three fillings - barbacoa, cochinita pibil, and potatoes orinoco. The barbacoa is slow roasted Barham Family Farms beef cheek. The cochinita pibil is slow roasted Oddbird Family Farm's Meishan Pork seasoned with achiote and citrus, and served with pickled red onions. The Orinoco is smashed fingerling potatoes, caramelized onions, toum, and jalapeño yogurt salsa.
